ELBOW MACARONI WITH CRISPY BREADCRUMBS AND BROCCOLI

Elbow Macaroni with Crispy Breadcrumbs and Broccoli image

"Even the pickiest children will like this pasta."

Provided by Geoffrey Zakarian

Categories     main-dish

Time 25m

Yield 4 to 6 servings

Number Of Ingredients 11

Kosher salt
6 tablespoons extra-virgin olive oil, plus more for drizzling
1/2 cup panko breadcrumbs
Finely grated zest of 1 lemon
2 tablespoons chopped fresh Italian parsley
3 cups elbow macaroni (about 12 ounces)
1 head broccoli, cut into small florets (about 4 cups)
1 clove garlic, finely chopped
1/4 teaspoon red pepper flakes
1 cup chicken stock
1 cup freshly grated parmigiano-reggiano

Steps:

  • Bring a large pot of salted water to a boil. Meanwhile, in a large skillet over medium heat, add 2 tablespoons olive oil. Add the breadcrumbs and toast, stirring constantly, until they are crisp and golden, 4 to 5 minutes, taking care not to let them burn. Scrape into a small bowl and toss with the lemon zest and parsley and then season with salt.
  • Add the pasta to the boiling water and cook according to the package directions until al dente while you make the sauce. Wipe out the skillet used to toast the breadcrumbs and return it to medium-high heat. Add the remaining 4 tablespoons olive oil and, when the oil is hot, add the broccoli and toss to coat. Saute until it turns bright green, 2 to 3 minutes, then add the garlic and pepper flakes. Cook until the garlic is fragrant, about 1 minute, then pour in the stock. Simmer until the broccoli is tender, 5 to 6 minutes.
  • When the pasta is done, scoop it out of the water with a spider or a small strainer and add directly to the sauce, reserving the pasta water. Simmer the pasta with the sauce just to blend the flavors, 1 to 2 more minutes, then drizzle with a tablespoon or so of olive oil and toss again.
  • If the sauce seems dry, add up to 1/2 cup pasta water. Off the heat, stir in the cheese. Serve in warmed bowls and sprinkle with the breadcrumb mixture.

2 tablespoons olive oil
1 lb chicken breast tenders, chopped
salt and pepper
1 small white onion, chopped
3 tablespoons green onions or 3 tablespoons chives
1 lb elbow macaroni
2 1/2 cups raw broccoli florets, chopped
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon cayenne pepper
1 tablespoon garlic powder
1 1/2 cups whole milk
1 cup heavy whipping cream

Provided by Tara Parker-Pope

Categories     side dish

Time 30m

Yield Makes six side-dish servings.

Number Of Ingredients 13

4 ounces grated Cheddar
2 ounces finely grated Parmigiano-Reggiano or other hard cheese
1 tablespoon unsalted butter
1 small yellow onion, chopped
6 ounces cremini or white button mushrooms, sliced
3 tablespoons unbleached all-purpose flour
3 cups low-fat or fat-free milk
1 tablespoon Dijon mustard
1 tablespoon minced tarragon leaves or 2 teaspoons dried tarragon
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
8 ounces dried whole-wheat pasta shells (not the large ones for stuffing), cooked and drained according to the package instructions
4 cups small broccoli florets, cooked in boiling water for 1 minute (broccoli can be added to the pasta during the last minute of cooking, then drained with the pasta in a colander)

Steps:

  • Mix the Cheddar and Parmigiano-Reggiano in a medium bowl. Set aside.
  • Melt the butter in a large, high-sided, oven-safe skillet. Add the onion and cook, stirring often, until softened, about 3 minutes.
  • Add the mushrooms and cook until they release their liquid and it comes to a simmer, and then reduces by about two-thirds, about 5 minutes.
  • Sprinkle the flour over the vegetables in the skillet. Stir well to coat.
  • Whisk in the milk in a steady, thin stream until creamy. Then whisk in the mustard, tarragon, salt and pepper. Continue whisking until the mixture starts to bubble and the liquid thickens, about 3 minutes
  • Remove the skillet from the heat. Stir in three-quarters of the mixed cheeses until smooth. Then stir in the cooked pasta and broccoli.
  • Preheat the broiler after setting the rack 4 to 6 inches from the heat source. Meanwhile, sprinkle the remaining cheese over the ingredients in the skillet. Set the skillet on the rack and broil until light browned and bubbling, about 5 minutes. (If your skillet has a plastic or wooden handle, make sure it sticks outside the oven, out from under the broiler, so the handle doesn't melt.) Cool for 5 to 10 minutes before dishing up.

BROCCOLI AND MACARONI

Broccoli and Macaroni image

Great dinner receipe for the family or just you. You could make the broccoli mix the night before and refrigerate, and the pasta the day of your dinner.

Provided by Delia H

Categories     Pasta

Time 1h10m

Number Of Ingredients 9

1lb pasta of choice
2 cubes large chicken bouillon
1 Tbsp butter
c water to cover broccoli
4-5 clove garlic
1-2 bag(s) frozen broccoli florets
2-3 Tbsp evoo
Pinches of salt, pepper, hot pepper
Tbsp parmesan cheese

Steps:

  • 1. In a pot sauté your garlic and oil. Add your broccoli florets and cover with water. Bring to a boil. Add chicken bouillon cubes and reduce heat. Throw in your butter and mix well.
  • 2. In another pot boil water for pasta. When pasta is done, put a couple of ladel filled with pasta water in your broccoli mix. Drain pasta and put in large pasta bowl. Now add your broccoli mix and mix well. The bouillon cubes will give the salt but you can add salt, pepper and/or hot pepper to taste.
  • 3. Sprinkle with Parmesan cheese and....Enjoy!

Tips:

  • Use fresh broccoli: Fresh broccoli has a vibrant green color and crisp texture, which will make your dish more appealing and flavorful.
  • Cook the macaroni al dente: Al dente means "to the tooth" in Italian, and it refers to the texture of pasta that is cooked through but still has a slight bite to it. This will prevent the pasta from becoming mushy when you add it to the sauce.
  • Make a creamy cheese sauce: A creamy cheese sauce is the perfect complement to the broccoli and macaroni. Use a good quality cheese, such as cheddar, Parmesan, or Gruyère, and make sure to melt it slowly so that it doesn't curdle.
  • Add some vegetables: If you want to add some extra vegetables to your dish, consider adding chopped carrots, celery, or zucchini. These vegetables will add color, flavor, and nutrients to your meal.
  • Serve immediately: Broccoli and macaroni is best served immediately after it is made. This will prevent the pasta from becoming soggy and the sauce from congealing.

Conclusion:

Broccoli and macaroni is a classic comfort food dish that is easy to make and loved by people of all ages. It is a versatile dish that can be customized to your liking by adding different vegetables, cheeses, or spices. Whether you are looking for a quick and easy weeknight meal or a hearty dish to serve at a special occasion, broccoli and macaroni is sure to please.
