- Preheat oven to 450 degrees F. Lightly oil a baking sheet or coat with nonstick spray. Thread shrimp and lemon halves onto skewers. Place skewers onto the prepared baking sheet. Place into oven and roast just until pink, firm and cooked through, about 5-7 minutes.* Melt butter in a medium skillet over medium high heat. Stir in lemon juice, garlic, oregano, thyme and basil until fragrant, about 2 minutes; season with salt and pepper, to taste. Serve shrimp skewers immediately, brushed with butter mixture and garnished with parsley, if desired.
BRINED LEMON-GARLIC SHRIMP SKEWERS
Steps:
- 1. mix salt and sugar in bowl and add shrimp, mixing to coat. Cover and chill 45-60 min (don't do too long). Rinse shrimp well and drain; also rinse and dry bowl. 2. return shrimp to bowl. Add olive oil, parsley, lemon peel, garlic and pepper. Mix to coat. Thread shrimp on skewers. 3. lay shrimp skewers on an oiled BBQ grill over high heat; close lid on grill. Cook, turning once until shrimp are bright pink and opaque but still moist-looking in center of thickest part, 5 to 6 minutes total. Serve with lemon wedges.
LEMON GARLIC SHRIMP SKEWERS
