3 tablespoons coconut oil, divided
2 sweet potatoes, grated
3 (4 ounce) links pork breakfast sausage, chopped, or to taste
1 sweet onion, chopped
4 eggs
½ cup coconut milk
¾ teaspoon dried sage
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with 1 tablespoon coconut oil.
  • Place grated sweet potatoes in the bottom of the baking dish.
  • Heat 2 tablespoons coconut oil in a skillet over medium heat. Add sausage and onion. Cook and stir until sausage is browned and onion is translucent, about 5 minutes. Place mixture in the baking dish on top of the potatoes.
  • Mix eggs, coconut milk, sage, salt, pepper, and garlic powder together in a bowl. Pour mixture into the baking pan.
  • Bake in the preheated oven until set, about 45 minutes.

Contains a "crust" of homemade hashbrowns and bread cubes and topped with onions, bell peppers a few spices, bacon, eggs and cheese. That is it and you have breakfast for 6 (2x4 in) pieces....

1 c homemade or bought hashbrowns, unthawed
2 slice white or wheat bread, cubed
4 slice bacon or turkey bacon, cooked and chopped (could use 1/4 lb pork or turkey sausage, sliced links)
2 Tbsp rounded of yellow or green onion, small dices
2 Tbsp rounded of bell pepper (any collor), small dices
3 Tbsp diced tomato
3 eggs or egg substitute equivalent, beaten
1/2 c 1% milk
1/8 tsp salt
1/2 tsp paprika
dash(es) cayenne pepper (optional)
1/2 tsp mrs dash (optional)
3/4 c shredded cheese, monterey jack or cheddar

Steps:

  • 1. Preheat oven to 350°F.
  • 2. Place 1 cup of frozen hashbrowns on the bottom of a sprayed 8x8 baking pan. Top with 2 slices cubed white or wheat bread. Sprinkle onions, tomato, bell pepper, bacon and cheese on top of hashbrowns and bread.
  • 3. In a small bowl, combine eggs, milk, salt, cayenne pepper. Mrs. Dash and paprika and mix to combine. Pour mixture into the baking dish on top of hashbrown mixture and toppings and gently press down. Bake for 30-40 minutes until knife comes out clean and cheese is melted.

1 lb Italian pork sausage (then cooked, drained, crumbled)
4 1/2 cups cubed day old bread
2 cups shredded sharp cheddar cheese
10 eggs, slightly beaten
4 cups whole milk
1 teaspoon dry mustard
1 teaspoon salt
1/4 teaspoon onion powder
fresh ground pepper
1/2 cup sliced mushrooms (optional)
1/2 Rotel tomatoes & chilies (optional)

Steps:

  • 1 Heat a skillet on medium high. Break up the sausage into chunks and cook, working in batches if need be, until browned all around. Make sure the chunks of sausage have some space around them or your meat will steam and not brown. Remove the cooked sausage from the pan and let sit on some paper towels on a plate to soak up the excess fat. Crumble into smaller pieces.
  • 2 Place bread in a well buttered 9x13 inch baking pan. Sprinkle with cheese. Combine the eggs, milk, dry mustard, onion powder and pepper. Pour evenly over the bread and cheese. Sprinkle sausage and optional ingredients over the top.
  • 3 At this stage you can cover and chill overnight, if you want to prepare ahead. If not, let sit for 10 minutes before putting in the oven. Preheat oven to 325 degrees F. Bake uncovered for about one hour. Tent with foil if top begins to brown too quickly.

8 slice white bread, cubed
8 oz sharp cheddar cheese, shredded
2 1/2 c milk, divided
6 eggs, beaten
1/4 tsp dry mustard
1/2 tsp marjoram, dried
1/2 tsp basil, dried
1 can(s) cream of mushroom soup, undiluted

Steps:

  • 1. Brown sausage, drain and set aside.
  • 2. Place bread in a greased 9" x 13" baking dish and top with cheese and sausage.
  • 3. Combine 2 cups milk, eggs, dry mustard, marjoram and basil.
  • 4. Pour over sausage, cover and chill 8 hours or overnight.
  • 5. Mix soup with 1/2 cup milk and pour over casserole.
  • 6. Bake at 350-degrees for 1 hour.

1 can(s) ready made potato soup
1 can(s) ready made new england clam chowder soup
1 dozen large deviled eggs sliced
2 small can(s) tiny shrimp or cooked breaded shrimp
1 can(s) cream of shrimp soup
1 tube large ritz crackers
2 Tbsp melted butter

Steps:

  • 1. Add all soups in pan til slow boil add 1/2 can milk.
  • 2. Place soup in 9x13 pan.
  • 3. Sprinkle cans of shrimp or cooked fried shrimp (both taste great I prefer the cooked fried has more texture and taste).
  • 4. Place your deviled eggs as you like them prepared in rows of 3 across and 4 down.
  • 5. Mix melted butter and ground up crackers together (add more cracker mixture to your liking).
  • 6. Place in preheated oven 350* and bake for about 10 minutes til crackers turn golden. scoop and serve and enjoy!!!
