Time 35m

Yield Makes 6

Number Of Ingredients 5

3 tablespoons unsalted butter, melted
8 slices white or whole-wheat sandwich bread
6 slices bacon
6 large eggs
Coarse salt and ground pepper

Steps:

  • Preheat oven to 375 degrees. Lightly butter 6 standard muffin cups. With a rolling pin, flatten bread slices slightly and, with a 4 1/4-inch cookie cutter, cut into 8 rounds. Cut each round in half, then press 2 halves into each muffin cup, overlapping slightly and making sure bread comes up to edge of cup. Use extra bread to patch any gaps. Brush bread with remaining butter.
  • In a large skillet, cook bacon over medium, until almost crisp, 4 minutes, flipping once. (It will continue to cook in the oven.) Lay 1 bacon slice in each bread cup and crack an egg over each. Season with salt and pepper. Bake until egg whites are just set, 20 to 25 minutes. Run a small knife around cups to loosen toasts. Serve immediately.

Tips:

  • Prep your ingredients beforehand: Dicing, measuring, and setting out all of your ingredients before you begin cooking will help you stay organized and ensure that you have everything you need on hand.
  • Use fresh ingredients whenever possible: Fresh ingredients not only taste better, but they're also more nutritious. If you can, try to use organic or locally-sourced ingredients whenever possible.
  • Don't overmix the batter: Overmixing the batter can result in tough, dense muffins. Mix just until the ingredients are combined.
  • Don't overfill the muffin cups: Filling the muffin cups too full can result in muffins that overflow and bake unevenly. Fill the cups no more than 2/3 full.
  • Bake the muffins at the correct temperature: The temperature of your oven can greatly affect the outcome of your muffins. Be sure to preheat your oven to the correct temperature before baking.
  • Let the muffins cool before serving: Muffins are best enjoyed when they're slightly warm. Let them cool for a few minutes before serving to allow the flavors to meld together.
