BREADMAKER GRANOLA
Make healthy Granola to use in trail mix or over yogurt for a healthy breakfast...in your breadmaker! I use about a 1/3 cup scoop of this over about 1/3 cup - 1/2 cup plain natural yogurt for my breakfast every day. I also found this to be an easy, filling and healthy camping breakfast with the individual size yogurts thrown in the cooler. Choose your own combo of nuts and dried fruits...for a special treat, add some dark chocolate chips after it has cooled.

Steps:
- Put all ingredients except the dried fruit in the breadmaker. Set to jam cycle and run. This will produce well-toasted but not burnt granola. If you like it a little less toasted, simply take it out before the time is up.
- Add dried fruit after the cycle is finished.
- Tips:.
- Use a few tablespoons of orange juice concentrate instead of applesauce for an orangy flavor. This is would taste good with Craisins sweetened dried cranberries at the end.
- If you like crispy, lumpy granola then add 1/2 cup of flour mixed with 1/4 tsp baking soda and a quarter cup of fruit juice concentrate.
- If you want to use this as more of a trail mix than a yogurt topping it might be better to omit the ground flax.
- I use a pair of scissors to cut up the apricots, but I'm sure a knife and chopping board would work just as well.

Steps:
- In large bowl, mix 1 cup of the flour, the salt and yeast. In 1-quart saucepan, heat water, buttermilk, honey and butter over medium heat, stirring frequently, until very warm (120°F to 130°F); stir into flour mixture until blended. Stir in granola. Stir in enough remaining flour to make dough easy to handle.
- Place dough on lightly floured surface; gently roll in flour to coat. Knead about 8 minutes or until smooth and springy. Grease large bowl with shortening or cooking spray. Place dough in bowl, turning dough to grease all sides. Cover; let rise in warm place about 1 hour or until dough has doubled in size. (If using fast-acting yeast, do not let rise 1 hour; cover and let rest on floured surface 10 minutes.)
- Grease large cookie sheet with shortening or cooking spray. Shape dough into round loaf, about 5 inches in diameter and 3 inches high. Place on cookie sheet. Cover; let rise in warm place 45 to 60 minutes or until about 7 1/2 inches in diameter.
- Heat oven to 400°F. Make 2 long cuts in top of dough to resemble one large "+" sign with sharp knife. Brush or spray top of dough with water. Bake 20 to 25 minutes or until loaf is golden brown and sounds hollow when tapped. Remove from cookie sheet to cooling rack; cool.

Tips:
- Use a variety of oats: Combine old-fashioned rolled oats, quick-cooking oats, and steel-cut oats for a mixture of textures.
- Choose the right nuts and seeds: For a classic granola, use nuts like almonds, pecans, and walnuts. For a more unique flavor, try pumpkin seeds, sunflower seeds, or chia seeds.
- Sweeten it naturally: Use honey, maple syrup, or agave nectar to sweeten your granola without refined sugars.
- Add spices for extra flavor: Cinnamon, nutmeg, and ginger are popular choices for granola. You can also try cardamom, cloves, or allspice.
- Don't overcrowd the breadmaker: Fill the breadmaker pan no more than halfway to allow the granola to spread evenly and toast properly.
- Store the granola properly: Keep your granola in an airtight container at room temperature for up to two weeks. For longer storage, freeze the granola for up to six months.
