My husband's quest to find a recipe which produces light, fluffy (rather than solid and dense) spelt bread from a bread machine has finally paid off. He did lots of experimenting, and this one has produced consistently good results. Update: can't see how to respond to the review which found the bread heavy, so responding here. If you definitely used WHITE spelt flour, not wholewheat, then it sounds as though perhaps different bread machines get different results? :-( However, there is one other possibility. Did you use fast action dried yeast, suitable for breadmakers? Or Dried active yeast which is for hand baking? We were using the former. The other thing my husband suggested trying, if you're using the correct flour and yeast, is to try upping the amount of yeast you're using, and see if that helps. You could also try upping the amount of water slightly, but try each solution separately first :-) My husband's number one rule, stemming from his scientific background :-) Hope one of these tips work, and not that it is the bread machine themselves (ours is a Panasonic SD255)

2 cups white spelt flour
2 cups wholemeal spelt flour
2 1/2 teaspoons fast-rising active dry yeast (6g)
1 1/2 cups tepid water
1 teaspoon salt
2 tablespoons sugar
2 tablespoons vegetable oil

Steps:

  • Add water to bread machine, then oil, then flour, then salt, then sugar, then yeast.
  • Set on "Normal" setting (which is 4 hours), with small loaf and light crust settings.
  • NB: If you use wholegrain spelt rather than wholemeal, then reduce the yeast to 1.5 slightly rounded teaspoons (about 3.5g).

1 1/2 teaspoons salt
2 tablespoons canola oil
3 tablespoons honey

  • Put the ingredients into your machine in the listed order.
  • Choose setting on bread machine: light crust, 1.5 pound loaf, either the rapid wheat or whole wheat settings work just fine, depending on how much time you have. After the flour has been added, make a depression in the flour to hold the yeast until mixing begins.

Note: The rapid bake cycle on my bread machine is approx. 2 hours long. I have noticed that some bread machines have a super rapid cycle of approx. 1 hour. 1 cup warm water (110 degrees F/45 degrees C, microwave approx. 50 seconds with room temperature water)
2 tablespoons white sugar
2 teaspoons instant yeast
4 tablespoons vegetable oil
3 cups spelt flour (light or all-purpose)
1 teaspoon salt

Steps:

  • Place the water, sugar and yeast in the loaf pan of the bread machine.
  • Let the yeast dissolve and foam for 10 minutes.
  • Add the oil, flour and salt to the loaf pan.
  • Select the Rapid Bake, Light Crust setting, and press Start.
  • Help unstuck any flour from the sides during the first mix cycle. Add additional flour or liquid, if needed. I didn't need to.
  • My bread machine has a 7 minute power failure backup feature. I unplug the bread machine during the last rise cycle for 5 minutes. This gives a lighter loaf when finished.
  • When baked, the internal temperature should be between 190°F and 200°F.
  • When finished baking, let cool 1 hour on a rack before storing in a plastic bag (I use a zip-lock). The loaf can be sliced and frozen, if desired.

  • Use 2 lb loaf setting, for whole wheat. Altho, I find the basic setting on mine works well with the light spelt. My machine also comes close to burning the bottom so I set the browning to light. You know your settings best.
  • Let the loaf rest on a cooling rack for 15 minutes before slicing.

I like to try different toppings each time I make this recipe, such as sesame seeds, dried onion flakes, granulated garlic, kosher salt, or flax seeds.

1 cup warm water
¼ cup olive oil
2 eggs
1 ½ teaspoons salt
⅓ cup white sugar
2 cups white spelt flour
2 cups whole grain spelt flour
4 teaspoons xanthan gum
1 (.25 ounce) envelope dry yeast
1 egg, beaten
1 tablespoon poppy seeds

Steps:

  • Pour the water, olive oil, and eggs into a bread machine pan. Add salt, sugar, spelt flours, xanthan gum, and yeast. Place into bread machine and set to dough cycle. Check on the dough as it is mixing to ensure that it mixes well. Use a rubber scraper to scrape down the sides of the pan if needed.
  • When the dough has finished, remove and divide into 3 pieces. Shape each piece into an 18 inch long rope. Braid the three ropes together, seal the tips together, and fold under the loaf.   • Preheat oven to 375 degrees F (190 degrees C). Brush the loaf with beaten egg, and sprinkle with poppy seeds.
  • Bake in preheated oven until the challah has turned golden brown, and the loaf sounds hollow when tapped on the bottom, 40 to 45 minutes.
