BRAISED FENNEL WITH PEPPERS AND OLIVES

Braised Fennel With Peppers and Olives image

Provided by Florence Fabricant

Categories     side dish

Time 45m

Yield 4 servings

Number Of Ingredients 5

2 medium-sized fennel bulbs (about 1 1/4 pounds)
2 medium-sized red bell peppers
2 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
1/2 cup pitted black French, Italian or Greek olives

Steps:

  • Remove stalks and any browned outer layers of the fennel and cut each bulb into quarters lengthwise. Cut off and discard core from each piece. Holding the layers together, cut each fennel piece into one-quarter-inch slices lengthwise, to obtain long strips.
  • Cut peppers in half lengthwise and remove core and ribs. Cut in half crosswise and cut each quarter into lengthwise strips about one-quarter inch wide.
  • Heat olive oil in a large skillet over low heat. Add fennel and salt and pepper to taste. Stir well. Cover and cook, stirring occasionally, for 15 minutes. Add peppers. Cover and continue cooking about 10 minutes or until the vegetables are tender. Taste and adjust seasonings but be cautious with the salt because the olives will add some saltiness.
  • Transfer fennel and peppers to a platter, top with olives and serve.

BRAISED PEPPERS AND ONIONS

Braised Peppers and Onions image

This base of slowly stewed peppers and onions can serve as the foundation for a wide variety of dishes: Add seared flank steak or pork butt, capers, olives, raisins and canned tomatoes, and simmer it into deliciously shreddable Cuban ropa vieja, to enjoy with black beans, rice and braised greens. Slice Italian sausage, sear it along with chicken legs, then add 1/2 cup each of brown sugar and apple cider vinegar, plus a couple of cups of these peppers and onions, and cook until the sauce reduces to a sweet-tart glaze as the meat slowly braises. (Try that on top of boiled yellow potatoes.) Bloom freshly ground ancho, pasilla or other dried chile in oil, then add this sauté, a few cups of cooked black beans and chickpeas, plenty of Mexican oregano and some canned tomatoes to simmer into a rich vegan chili, garnished with roasted sweet potato. But for the simplest use, just slather these peppers on top of a hot dog in a buttered, toasted bun.

Time 30m

Yield About 3 cups

1 large yellow onion, thinly sliced
2 garlic cloves, minced
2 tablespoons ground cumin
2 dried bay leaves
Kosher salt and black pepper

CARAMELIZED FENNEL AND ONIONS - A SLOW, EASY MEDITERRANEAN SIDE

Caramelized Fennel and Onions - A Slow, Easy Mediterranean Side image

Sliced Fennel and onions are sautéed first then slowly cooked until they are caramelized to a toasty brown, finished with Parmesan, lemon, and Italian parsley. A great side dish with a sweet flavor and licorice notes.

Categories     Appetizer     side     Vegetables

Time 1h10m

Number Of Ingredients 11

1 large fennel bulb (slice fennel into 1/4 inch slices.)
1 large red onion (may also use white onion cut in 1/4 inch thick slices (halved then sliced lengthwise from root to tip))
2 Tablespoons olive oil
1 Tablespoon butter
Kosher salt
2 Tablespoons grated Parmesan
1 Tablespoon chopped fresh Italian parsley
1 teaspoon lemon zest (may use orange zest)
2 teaspoons fresh lemon juice (may use orange juice )
black pepper (dash)
Basil leaves rolled and sliced for top (optional)

Steps:

  • Heat olive oil and butter in a large skillet uncovered over medium-high heat. Add the sliced fennel and onions and stir to coat. Stir occasionally, after 10 minutes sprinkle the vegetables with about a teaspoon salt. Lower the temperature to medium. You want the pan hot enough to get the caramelization going but not so much that the fennel and onions dry out. If that does happen, add a tablespoon or two of water.
  • Stir occasionally, scraping up any bits that are on the bottom. The brown bits are the ones with the most flavor. Cook for another 30 minutes or up to an hour, depending on how impatient you are. The longer it cooks the more caramelized the onions and fennel become. Taste test along the way. The dish will have a lot of flavor and doesn't have to be cooked down all the way.
  • When ready to serve, remove the pan from the heat, add in the grated Parmesan cheese, the chopped parsley, lemon zest, and lemon juice, and black pepper.
  • Sprinkle with slivered basil leaves, if desired. Or serve with the fennel fronds.
  • Pan roasted fennel is excellent served with Italian sausages, pork chops, roast chicken, seafood, or on crostini. I can't think of anything that I wouldn't serve with it.

BRAISED SPRING ONIONS, FENNEL AND SWISS CHARD

Braised Spring Onions, Fennel and Swiss Chard image

Provided by Anne Burrell

Categories     side-dish

Time 25m

Yield 4 servings

Number Of Ingredients 9

Extra-virgin olive oil
2 garlic cloves, smashed
Pinch crushed red pepper flakes
3 small spring onions, julienned
2 small fennel bulbs, thinly sliced on a mandoline
1 bunch white Swiss chard, stems cut into 1/2-inch lengths, leaves cut into 1-inch lengths, leaves and stems reserved separately
Kosher salt
1/2 cup dry white wine
1 Meyer lemon, zested on a microplane and juiced, zest and juice reserved separately

Steps:

  • Coat a large saute pan with olive oil. Toss in the smashed garlic and crushed red pepper and bring the pan to a medium heat. When the garlic becomes golden brown and very aromatic, remove it from the pan and discard it. It has fulfilled its garlic destiny. Add the onions, fennel and Swiss chard stems, stir to coat with the oil and season with salt, to taste. Stir in the white wine and the lemon zest and juice. Cover and cook over medium heat until the veggies have become soft and wilted but still maintain some texture, about 5 to 6 minutes. Remove the lid and cook until most of the liquid has reduced, another 3 to 4 minutes. Toss in the Swiss chard leaves, stir to combine and season with salt, to taste. When the leaves have wilted but still look vibrantly green, taste for seasoning. Reseason if needed (it probably will). Transfer to a serving bowl and serve immediately.
  • It's spring greens!

ITALIAN SAUSAGE WITH FENNEL, PEPPERS, AND ONIONS

Italian Sausage with Fennel, Peppers, and Onions image

Provided by Melissa Roberts

Categories     Onion     Pepper     Broil     Quick & Easy     Dinner     Sausage     Fennel     Gourmet     Paleo     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added

Yield Makes 4 servings

Number Of Ingredients 5

4 Italian frying peppers (Cubanelle) cut into 2-inch pieces
1 large fennel bulb, bulb quartered, then cut into 2-inch-wide pieces and 1/4 cup fronds coarsely chopped (discard stalks)
1 large onion, quartered and cut into 2-inch pieces
1 1/2 pound hot or sweet Italian sausage links, halved crosswise
1/4 cup olive oil

Steps:

  • Preheat broiler.
  • Toss together all ingredients except fennel fronds with 1/2 teaspoon salt in a large shallow baking pan. Broil 4 inches from heat until sausage is browned and vegetables begin to soften, about 10 minutes. Turn over and stir, then broil until sausage is just cooked through and vegetables are softened, 8 to 10 minutes more. Serve sprinkled with fennel fronds.

Tips:

  • Choose the right fennel: Look for medium-sized fennel bulbs with tight, white bulbs and no blemishes or bruises. The fronds should be bright green and aromatic.
  • Trim the fennel: Cut off the root end and the tough outer leaves of the fennel. Remove any blemishes or bruises from the bulb. Slice the fennel bulb into 1-inch thick wedges.
  • Slice the onions and peppers: Cut the onions into thin slices and the peppers into 1-inch pieces.
  • Use a Dutch oven or large skillet: A Dutch oven or large skillet with a lid is ideal for braising the fennel. This will help to create a moist and flavorful cooking environment.
  • Brown the fennel and vegetables: Heat the olive oil in the Dutch oven or skillet over medium-high heat. Add the fennel wedges, onions, and peppers and cook until they are browned on all sides. This will add flavor and color to the dish.
  • Add the liquids: Pour in the white wine and chicken broth. Bring to a boil, then reduce heat to low and simmer for 15 minutes, or until the fennel is tender.
  • Season to taste: Once the fennel is tender, season the dish with salt, pepper, and any other desired herbs or spices. You can also add a squeeze of lemon juice for a bit of brightness.
  • Serve: Braised fennel is a delicious side dish that can be served with roasted chicken, grilled fish, or pasta. It can also be enjoyed as a vegetarian main course.

Conclusion:

Braised fennel with onions and peppers is a simple yet flavorful dish that can be enjoyed as a side dish or main course. The fennel is tender and slightly sweet, while the onions and peppers add a savory and aromatic flavor. This dish is also very easy to make, and it can be ready in under an hour. So next time you're looking for a delicious and healthy side dish, give braised fennel a try!
