3 tbsp plain/all purpose flour
½ tsp salt
½ tsp black pepper
½ tsp paprika
1 tbsp olive oil
2 tbsp unsalted butter
2 cloves garlic (minced)
120 ml (1/2 cup) chicken stock
4 tbsp fresh lemon juice ((juice from approx. 1.5 lemons))
3 tbsp honey
1 lemon sliced into half-moon slices
1 tbsp freshly chopped parsley
Cooked rice, (spaghetti/linguine or orzo)

Steps:

  • Place the chicken breasts on a tray or board. Mix together the flour, salt, pepper and paprika. Coat both sides of the chicken with the flour mixture.
  • Heat the oil and butter in a large frying pan over a medium-high heat, until the butter melts.
  • Add the chicken to the pan and cook for 7-8 minutes, turning once, until both sides are golden brown.

1/4 cup soy sauce

1 tablespoon olive oil
1 5/8 kg whole chickens, cut into 8 pieces
1 red onion, sliced
12 whole garlic cloves, peeled
1 lemon, cut into chunks
3/4 cup chicken stock
1/2 cup honey
fresh oregano leaves

Steps:

  • In a large, deep frypan over high heat, add oil and chicken. Cook chicken, turning only once, for approximately 5-8 minutes until golden brown. Remove chicken to a plate and set aside. Reducing heat to medium, add onion and cook for 1 minute than add garlic and cook for another minute.
  • Return chicken to pan, add the lemon, chicken stock and honey. Reduce heat to medium-low, place cover on pan and simmer for approximately 20 minutes or until the chicken is cooked through.

1/3 cup dry white wine

4 boneless chicken breasts, skin on (6 to 8 ounces each)

  • Preheat the oven to 400 degrees F.
  • Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 by 12-inch baking dish.
