SUN-DRIED TOMATO AND BOW TIE PASTA
Anti-meat pasta dish, which makes your tastebuds feel alive with the great combined flavors of sun dried tomatoes, olive oil, red pepper and pesto sauce. My husband and I came up with this recipe about two years ago playing around in the kitchen one day. Ever since then it has been our family's favorite. Garnish each dish with red pepper or Parmesan cheese to your taste. Instead of making your own pesto you can use 1/2 bottle of pre-made pesto from the grocery store.

BOW TIES WITH SAUSAGE, TOMATO, AND CREAM
A very easy pasta dish for busy evenings. I like it served with crusty bread (to dip in the sauce) and a tossed salad. I have even doubled the recipe and served it to guest on a casual evening.

Steps:
- In heavy skillet over medium heat cook bacon, pepper flakes, onion and garlic and cook until onion is tender and bacon is done, about 7 minutes.
- Add tomatoes, cream and salt. Simmer until slightly thickened, about 15 minutes.
- Toss with cooked pasta. Add lots of Parmesan cheese and sprinkle with parsley.
Tips:
- Choose the right pasta. Bow tie pasta, also known as farfalle, is a good choice for this dish because it holds the sauce well. Other good options include penne, rigatoni, and fusilli.
- Use fresh, ripe tomatoes. This will give your sauce the best flavor. If you can't find fresh tomatoes, you can use canned tomatoes, but be sure to drain them well first.
- Don't overcook the pasta. Al dente pasta is the perfect texture for this dish. Cook the pasta according to the package directions, but be sure to check it a few minutes before the recommended cooking time is up.
- Make the sauce ahead of time. You can make the sauce up to 3 days in advance and store it in the refrigerator. When you're ready to serve, simply reheat the sauce over low heat until warmed through.
- Garnish with fresh herbs. Fresh basil or parsley adds a nice touch of flavor and color to this dish.
Conclusion:
Bow tie pasta with tomato cream sauce is a delicious and easy-to-make dish that is perfect for a weeknight meal. The creamy sauce is rich and flavorful, and the bow tie pasta is a fun and unique shape that kids and adults will love. This dish is also a great way to use up leftover tomatoes.
