2.5 pounds chicken parts (bone-in, skin on - use a whole cut up chicken or your favorite parts, like leg thigh quarters, breasts, etc)
1/2 cup olive oil (+ more as needed)
Juice from 1 large orange
Juice from 1 large lime
2 tablespoons vinegar
6 cloves garlic (minced)
1 tablespoon sazon (+ more for sprinkling)
1 tablespoon achiote powder (+ more for sprinkling)
1 tablespoon paprika (or use cayenne for more heat)
1 tablespoon Mexican oregano
1 teaspoon cumin
1 teaspoon red pepper flakes
Salt and pepper to taste
FOR GARNISH: Fresh chopped cilantro (lime wedges, chili flakes)

Steps:

  • Marinate the Chicken. Mix together 1/2 cup olive oil, orange juice, lime juice, vinegar, garlic, sazon, achiote, paprika, oregano, cumin, red pepper flakes and a bit of salt and pepper. Add the chicken to a large platter or dish and pour in the marinade. Alternatively, you can use a large sealable bag. Refrigerate and marinate the chicken for at least 1 hour. 3 hours is best.
  • Grill the Chicken. Remove the chicken from the marinade and reserve the marinade. Heat your grill to medium heat and lightly oil the grates. Sprinkle the chicken with extra sazon and achiote powder. Grill the chicken pieces 5 minutes per side.
  • Roast the Chicken. Heat oven to 450 degrees F. Set the grilled chicken into a baking dish or cast iron pan and roast the chicken for 20 minutes, or until the chicken cooks through, turning half way through and basting often with the reserved marinade. The chicken should measure 165 degrees F. internally when checked with a meat thermometer.
  • Garnish and serve!

This recipe for Mexican Green Chile Hot Pot is a recipe that I created almost 40 years, ago. I used to make it differently in an electric skillet with cut-up chicken and served over noodles or rice. (I called it Spicy Mexican Chicken). Recently, I decided to kick it up a notch, so I added some new ingredients and changed my cooking method. We now have a delicious new recipe! You can make it as spicy as you wish, or you can make it on the milder side. This is an easy-to-make, one-pot dutch oven meal. I serve mine with cornbread or warm tortillas, but crusty bread is good, too. Enjoy!

6 - chicken thighs, bones removed, skin on
2 - tablespoons olive
1 - tablespoon bacon grease
- salt and pepper to taste
3 - russet potatoes, peeled and cubed
1 - large onion, cut into chunks
4 - large carrots, scraped, cut into chunks
1 - 7 ounce can of whole green chiles, drained, cut into one-inch pieces
1 - cup mushrooms, sliced, or 1 can mushrooms, drained
2 - tablespoons minced garlic
2 - cups chicken broth or stock
1/4 to 1/2 - cup of mild rotel
1 - tablespoon worcestershire
1/2 - tablespoon cumin
1 - tablespoon of natures seasoning
1/4 - cup marsala wine

Steps:

  • Note. My inspiration for this recipe was Andy Anderson's Awesome Baked Garlic & Chicken. Thanks, Chef!
  • Wash and peel the potatoes, cut into cubes. Peel onion and cut into chunks. Wash and scrape the carrots, cut into chunks.
  • Blot the vegetables with a clean towel. Set aside
  • Rinse the 6 chicken thighs, remove the bones, and trim away about half of the chicken skin from the thighs, leaving the rest of the fat intact. Blot with paper towels to dry.
  • Sprinkle thighs with salt and pepper on both sides.
  • Place oil and bacon grease in the dutch oven and heat over medium heat. When the oil is hot, place the chicken in the hot pot with the skin side down in the hot grease. Fry until golden brown and turn and fry the other side.
  • Remove the browned thighs to a plate. Set aside.
  • Preheat oven to 375 degrees
  • Scrape to loosen the brown bits in the hot pot, then add the chopped potatoes, onions, 2 tablespoons minced garlic, and carrots to the pot. Toss to coat with oil.
  • Add the following ingredients but don't stir. Add the 1 cup of mushrooms, return the browned chicken to the pot, and add the 7 oz can of drained chilis, 1 TBS cumin, and 1/4 cup Rotel.
  • Slowly, pour in the 2 cups chicken broth, 1/4 cup wine, and 1 TBS Worcestershire sauce over the chicken. Don't stir.
  • Bake this dish 1 hour 30 minutes. Serve in bowls with the pot juices drizzled over the meat and veggies. Add bread or warm tortillas to your meal -- your choice. Enjoy!
  • MONEY SAVING TIP: Since you will only be using 1/4 to 1/2 cup of Rotel, you can freeze the rest in a sandwich baggie. As soon as it is frozen, transfer the Rotel to a ziplock bag. I use this method to freeze small amounts of salsa, Rotel, green chilis, canned tomatoes, tomato sauce, etc.

2 large Chicken breasts (about 400 grams/14 ounces), boneless, skinless - cleaned and pat-dried
½ TSP freshly cracked Black Pepper, to taste
½ TSP Kosher Salt, to taste
1 TBLS Olive Oil (or any other cooking oil you prefer)
2-3 Garlic cloves - minced
1 Chipotle Pepper in Adobo Sauce - finely chopped, plus ½ TBLS Adobo Sauce from can
¼ TSP ground Cayenne
¼ TSP Smoked Paprika (Hot or Sweet, your choice)
½ TSP Oregano Flakes
1 cup your favorite Mexican Hot Sauce or red salsa (My favorites are Mrs. Renfro's Mexican Hot Sauce and La Morena Picante Salsa. I also occasionally like to use a combination of 1/3 cup Frontera Chipotle Salsa + 2/3 cup Mrs. Renfro's Mexican Hot Sauce.)
1-2 sprigs Coriander/Cilantro (optional) - chopped

Steps:

  • Season chicken breasts with salt and pepper to taste. Heat olive oil in a pressure cooker over medium high heat. Once hot, place the chicken breasts in the pressure cooker and briefly sear for half a minute on each side.
  • Add the minced garlic, chipotle pepper and adobo sauce, ground cayenne, smoked paprika, oregano flakes, and the Mexican hot sauce (or red salsa). Stir to combine.
  • Lower to heat to medium-low and cover the pressure cooker. Cook for 15-20 minutes (3-4 whistles), and then turn off the heat.
  • Allow the pressure to release naturally (this should take 8-10 minutes), then remove the lid of the pressure cooker.
  • Use tongs to transfer the chicken breasts to a chopping board or plate and shred with two forks. Return the shredded chicken back to the sauce in the pressure cooker and add the chopped coriander (if using). Stir to combine.
  • Use in quesadillas, tacos, nachos, burritos, sandwiches, wraps, salads, etc. If not using immediately, transfer to an airtight container and refrigerate. Use within 4-5 days.
  • Season chicken breasts with salt and pepper to taste. Select the 'Sauté' function on the instant pot. Once the pot displays 'Hot', add olive oil in the inner pot and heat for a minute. Place the chicken breasts in the pot and briefly sear for half a minute on each side.

  • Once cooking has completed, allow the pressure to release naturally. Remove the lid.
  • Use tongs to transfer the chicken breasts to a chopping board or plate and shred with two forks. Return the shredded chicken back to the sauce in the pot and add the chopped coriander (if using). Stir to combine.

6 or more boneless skinless thighs, cut into chunks
1 14 ounce can mexican tomatoes diced
1 can mushroom pieces drained
1/4 cup ortega chilis
4 heaping tablespoons mild rotel drained
1 finely chopped onion
1 tablespoon minced garlic
1 tablespoon cumin
1 tablespoon nature's seasoning
1 tablespoon worcestershire sauce
2 tablespoons olive oil
1/2 pound of egg noodles, cooked, drained and buttered
1 green onion chopped fine for garnish

Steps:

  • 1. PREPARE THE CHICKEN Use boneless, skinless, chicken thighs. Remove all excess fat and cut each thigh into fourths to make large chunks. Fry in olive oil and until golden brown on both sides. Remove the chicken, set aside.
  • 2. SAUTE VEGETABLES Saute the onion until tender, add the garlic, cook a few minutes, don't brown. Return chicken to the pan.
  • 3. SIMMER THE CHICKEN Add the tomatoes, mushroom pieces, ortega chilis, cumin, Nature's Seasons, worcestershire, gently mix. Cover and simmer for about 20 minutes until chicken is cooked through and flavors have blended.

CHICKEN
6 chicken thighs, skinless, boneless, trimmed of all fat
salt and coarse black pepper
3 tablespoons butter
1 cup all purpose flour for dredging
SAUTE
3 more tablespoons butter, melted
2 cups fresh mushrooms, sliced
2 cloves of fresh garlic, smashed
1 cup better than bouillon soup base
SAUCE
1 cup heavy whipping cream
3 tablespoons fresh lemon juice
1/2 teaspoon white pepper

Steps:

  • Put on a pot of water to boil for spaghetti noodles. Add a tablespoon of salt to the water.
  • I used organic spaghetti noodles. You can also use rice, or mashed potatoes.
  • We used boneless, skinless chicken thighs for this dish. You can also use boneless breast meat if you like. Add salt and coarse ground pepper to taste before frying. Dredge the chicken in flour and add to the butter in the skillet over medium heat.
  • Melt 3 tablespoons of butter in a deep skillet or Dutch oven to fry chicken. It takes about 5 minutes a side tor until a nice golden brown. Transfer the chicken to a platter and keep it covered and warm. Add the remaining 3 tablespoons of butter to the pan. Add the garlic and give it a stir in the butter. Add the mushrooms and saute until they are tender. Remove the mushrooms to the platter.
  • Add chicken broth and stir up the brown bits from the bottom of the skillet. Bring the mixture to a boil, then turn the heat down to a simmer and let it reduce to about 3/4 cup.
  • Stir in the cream and lemon juice. Cook the mixture over medium heat until it starts to thicken.
  • Add the mushrooms and the white pepper, and salt to taste, if needed.
  • Now, add the chicken and simmer 15 to 20 minutes until the sauce is of medium thickness. Then serve over spaghetti noodles, egg noodles, rice, or mashed potatoes.

1 teaspoon onion salt

2 eggs, lightly beaten
1/2 cup olive oil, for shallow frying
1 large avocado
1/2 cup low-fat sour cream
2 medium tomatoes, diced

Steps:

  • Process the avocado until smooth. Fold in 1/2 cup sour cream. Set aside in the fridge.
  • Combine breadcrumbs, hot paprika, cumin, onion salt, and oreganoin a bowl.
  • Toss chicken in flour, shake away excess. Dip in eggs, then coat in breadcrumb mixture.
  • Shallow fry chicken in hot oil until browned on both sides. Approximately 5-10 minutes either side.

CHICKEN MARINADE
1/2 cup water
1 teaspoon baking powder
1 teaspoon season salt, lawrys or johnnie's
SEASONING THE CHICKEN
1 tablespoons franks hot sauce
1/4 teaspoon of each salt and pepper
1/4 teaspoon garlic powder
SEASONED FLOUR
1 teaspoon ground dehydrated onion
1 teaspoon garlic powder
1/4 teaspoon red pepper flakes, ground
1/2 cup flour
1 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon season salt
1/2 teaspoon black coarse pepper
OTHER
2 eggs, whisked
THE PANKO DREDGE
1/3 cup butter in skillet
2 cups of panko or breadcrumbs. (we prefer the panko!)
1 teaspoon tumeric
1/4 cup parmesan cheese from jar

Steps:

  • 1. Assemble all your ingredients before you begin. You will need 3 small bowls and a medium skillet. Use boneless, skinless chicken. Cut into 1/4 inch strips.
  • 2. MAKE THE CHICKEN MARINADE Place 1/2 cup water, 1 teaspoon baking powder, and 1 teaspoon season salt. Add prepared chicken to the marinade. Let chicken sit one hour.
  • 3. SEASON THE CHICKEN After the chicken has marinated for one hour, remove it and drain in a colander. Place in a small bowl. Add some seasoning to the chicken. First add a tablespoon of Franks hot sauce to the strips and mix it in thoroughly. Lightly salt and pepper the meat, and sprinkle with a little garlic powder. About 1/4 teaspoon of each. We are giving it just a light seasoning, because there is seasoning in the flour mixture, too.
  • 4. MAKE SEASONED FLOUR Meanwhile prepare the seasoned flour. Add 1/2 cup flour a small bowl, and add the 1/4 cup Parmesan cheese from jar, and mix with the spoon. Add 1/2 teaspoon season salt, 1 teaspoon garlic powder, 1 teaspoon ground dehydrated onion, 1/4 teaspoon ground red pepper flakes, and 1/2 teaspoon black coarse pepper. 1 teaspoon chili powder, 1/2 teaspoon paprika. Whisk to combine..
  • 5. EGGS IN SMALL BOWL Add 2 eggs to a small bowl and whisk,
  • 6. MAKE THE PANKO DREDGE Place 1/3 cup butter in skillet over very low heat. When the butter melts, turn off the heat. Add the 2 cups of panko bread crumbs, and 1 teaspoon turmeric. Mix very well with a wooden spoon. Then add the Parmesan cheese. Mix well. Set aside.
  • 7. Line your bowls up in the order you will be dredging. Assembly is much easier. Starting with the bowl of seasoned flour, then the bowl of beaten eggs, Finally, to dip the chicken strips in the buttered Panko breadcrumbs in the skillet. Transfer each piece of chicken to a foil lined and kitchen sprayed pan.
  • 8. Dip a chicken strip in the SEASONED FLOUR.
  • 9. Then dip it in the BEATEN EGGS.
  • 10. Then dredge it in the skillet of PANKO BREADCRUMBS.
  • 11. As you dip each piece of chicken, transfer it to the prepared baking pan. Ready to Bake! Bake in a preheated 425 degree oven, for15 to 20 minutes, then flip and bake 5 to 10 minutes more. Times are approximate. It should just be golden brown. Don't overcook. This chicken when cooked properly is quite crunchy with a tender and juicy meat.

8 chicken thighs, skin on, bone in (boneless or skinless okay)
8 red potatoes, scrubbed and cut into one-inch uniform pieces
5 medium carrots, peeled and cut into 2-inch uniform pieces
2 sweet potatoes, peeled and cut into one-inch uniform pieces
1 large onion, peeled and cut into 8 wedges
2 cloves minced garlic
3 tablespoons olive oil (or oil of choice)
1 large lemon, zested, then juiced
2 teaspoons Dijon mustard
kosher salt and pepper, to taste, about a teaspoon each

Steps:

  • 1. Pre-heat the oven to 425 degrees. I use a large stainless steel pan with a shallow rim, big enough to hold all the ingredients in a single layer. Grease the pan with kitchen spray.
  • 2. Zest the lemon and squeeze the juice. Place the lemon juice in a large bowl. Add the zest, garlic, Dijon mustard, olive oil, salt, and pepper. Whisk until well combined. Pat thighs dry and add to the mixture in the bowl. Coat the chicken thighs with the mixture and place them skin UP in the center of the baking pan.
  • 3. Add the vegetables to the bowl with your hands and toss the vegetables until they are coated. Place the vegetables around the chicken in the pan in a single layer.
  • 4. Roast in the oven at 425 degrees for about 45 minutes. Stir the vegetables halfway through the cooking process. Test the vegetables to see if they are done, if not, continue cooking. At this time, using tongs, flip the chicken thighs over to "baste" the top of the meat in the juices, and then flip it back over. (Sneaky way to baste.)
