PORK AND DUMPLINGS

Pork and Dumplings image

No one makes this succulent pork roast and hearty old-world bread dumplings with gravy quite like my mom does. She learned how to prepare dishes like this one when she was a young girl in Austria. For my sisters and me, this is truly a taste of home. -Lisa Radelet, Boulder, Colorado

THE MEAT
2 medium sized pork chops, centercut, bone in, 1" thick
2 tablespoons melted butter
thyme to sprinkle
THE RUB

1tablespoon garlic powder
1/2 tablespoon dried onions ground to powder

CHINESE PORK DUMPLINGS

Chinese Pork Dumplings image

When I was growing up, my family made dumplings together every Sunday morning. It's a wonderfully interactive way to start the day. Dumplings are economical and simple to make and they taste especially great with the family by your side.

Time 40m

Yield 4 servings

Number Of Ingredients 17

1/2 medium green cabbage, roughly chopped
salt
1/2 teaspoon grated ginger
1 large clove garlic, finely chopped
1/2 cup finely chopped scallions
1/2 cup chopped garlic chives (optional)
3 ounces peeled shrimp, deveined and chopped
1/2 pound ground pork
1/4 cup soy sauce
1/2 teaspoon toasted sesame oil
Freshly ground black pepper
1 package dumpling wrappers
2 tablespoons vegetable oil
1/4 cup soy sauce
3 tablespoons rice vinegar
1 teaspoon thinly sliced scallion white
1 pinch toasted sesame seeds

Steps:

  • The filling: Place the cabbage in a food processor, add 1/2 teaspoon salt, and pulse until finely chopped but not puréed. Wrap the chopped cabbage in a clean kitchen towel and squeeze to remove juices, then transfer to a large bowl. Add ginger, garlic, scallions, and, if desired, garlic chives. Add the shrimp and pork and season with 1/4 cup soy sauce, sesame oil, and salt and pepper. Mix together by hand.
  • Taste the filling by poaching or frying a small amount, and adjust seasonings to taste. To prepare the dipping sauce, combine soy sauce, rice vinegar, scallions, and toasted sesame seeds in a small bowl.
  • To wrap, place 1 tablespoon of filling into the center of a dumpling wrapper. Wet the wrapper's edges, then fold in half to form a taco-like shape. Make a pleat on the side facing you about 20 degrees from the apex of the half-circle and seal with your fingers to the back of the skin. Repeat on the other quarter, in mirror fashion, and seal the dumpling completely, trying to eliminate any air pockets. Repeat until all filling is used.
  • To pan fry, heat oil in a large, nonstick pan over high heat. Add the dumplings in one layer so that they do not overlap. Add water to come halfway up the dumplings, and cover the pan. Reduce the heat to medium-high and cook until all water is evaporated and the bottoms are browned and crispy, about 10 minutes. Alternatively, the dumplings can be steamed until cooked through, about 5 minutes in a steam basket.
  • Transfer the dumplings to a plate and serve with a dipping sauce.

CHINESE STYLE PORK DUMPLING

Chinese Style Pork Dumpling image

Provided by Food Network

Time 4h20m

Yield 25 to 30 dumplings

Number Of Ingredients 33

2 tablespoons salt
2 tablespoons granulated sugar
1 tablespoon garlic powder
1 tablespoon ground black pepper
1 tablespoon ground white pepper
2 teaspoons lime juice
2 teaspoons sesame oil
1 tablespoon light soy sauce
1 tablespoon rice vinegar
1 tablespoon rice wine
1/2 teaspoon coriander seeds
1/2 teaspoon fennel seeds
1/2 teaspoon whole Sichuan peppercorns
Pinch whole cloves
1 pod star anise
1 pod black cardamom, cracked
One 3-inch cinnamon stick
3 pounds pork shoulder
1/4 cup rice vinegar
2 tablespoons sesame oil
2 tablespoons dark soy sauce
3 pounds cabbage, cored and shredded
1 pound grated carrots
1 cup minced garlic
1 cup minced fresh ginger
1 bunch green onions, finely diced
1/2 bunch fresh cilantro, finely chopped
1/3 cup demerara sugar
2 teaspoons yeast
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 cups all-purpose flour, plus more for dusting

Steps:

  • For the pork rub: Stir salt, granulated sugar, garlic powder, black pepper and white pepper together in a bowl.
  • For the braising liquid: Combine the lime juice, sesame oil, soy sauce, vinegar, wine and 1 tablespoon water together in a bowl.
  • For the braising spices: Heat oven to 400 degrees F.
  • Add coriander, fennel, Sichuan peppercorns, cloves, anise, cardamom and cinnamon stick to a muslin bag or tea strainer.
  • For the filling: Preheat the oven to 400 degrees F.
  • Slice shoulder into small chunks. Apply 1 1/2 cups rub to all pieces and place in an oven-safe pan. Add braising liquid and braising spices.
  • Cover pork with foil and braise for 1 hour, then turn oven to 275 degrees F and continue to braise for another 1 hour 30 minutes.
  • Remove pork chunks from braising liquid, then cool and shred. (Reserve liquid for anything your heart desires.)
  • Combine rice vinegar, sesame oil and soy sauce with pork. Add cabbage, carrots, garlic, ginger, green onions and cilantro and let cool.
  • For the dumpling dough: Combine demerara sugar, yeast, baking powder, baking soda and salt in a mixer or mixing bowl.
  • Add flour and 3/4 cup water and mix until smooth, about 10 minutes.
  • Divide dough into twenty-five to thirty 1.7-ounce balls.
  • Roll into rounds with a rolling pin and place on lightly floured parchment paper. Lightly stretch edges of dough rounds, leaving center as firm as possible. Place a dough round flat on your palm. Use an ice cream scoop to scoop compacted filling in center. Using your free hand, pinch 1 inch or so of the edge of the round together between thumb and index finger. The dough between the pinch should fold together. Use middle finger to pinch another 1 inch or so section of the edge of the dough round. Pull index finger from where it is and pinch another section of dough to the clump of pinches you've started in a finger-walking motion. Switch between middle and index finger of main hand as you "walk" your fingers around the edge of the dough. The key is to pinch, not twist! Use thumb of other hand in a spatula motion to help corral filling within round. Keep as much of the rim of the dough round as clean as possible, as the more dry the dough is, the easier it will stick to itself when pinched. Perform 7 to 9 total pinches until there is a clump of pinches at the center/top of the now mostly formed dumpling. Bring all pinches together into one, central pinch, then flatten. Flip over so top of dumpling is smooth and base of dumpling is where the pinched folds are. Place dumpling in a cupcake wrapper. Repeat with the remaining dough and filling.
  • Put wrapped dumplings into a steamer and cook until it looks flat in texture, not shiny, 10 to 13 minutes.

ED & SANDI'S PORK ROAST AND DUMPLINGS W/ SAUERKRAUT

Ed & Sandi's Pork Roast and Dumplings W/ Sauerkraut image

This is one of my favorite meals handed down from my Italian/Czech grandparents to my father to myself. The latter two individuals are still alive, so we're claiming credit for it. (Who's gonna argue?) It rates scary on the health-O-meter, but who cares?! It's delicious! Hey, if you want to go exercise, donate to the IRS or volunteer at your local library to alleviate your guilt, go right ahead. I want you to know that I'm usually very stingy with this recipe. Course, that doesn't mean you'll like it, but that's not MY fault! Oh, and just so you know, these are very firm and dense dumplings, not light and fluffy. We prefer these stick-to-your-bones babies. And each bite you take MUST have a bit of sauer kraut, pork and dumpling on it....it's the LAW. Number of servings is approximate.

Categories     Pork

Time 3h

Yield 8 serving(s)

Number Of Ingredients 13

4 cups flour (plus extra for kneading dough later)
4 cups prepared instant mashed potatoes (yes, INSTANT... this is important)
1 egg
4 lbs pork roast (WITH its fat, add butter later if you don't have enough)
6 garlic cloves, peeled
1 teaspoon onion powder
1 tablespoon dried onion flakes
2 tablespoons caraway seeds (to season the roast and the sauerkraut)
1 teaspoon sage (to taste)
salt and pepper (to taste)
28 ounces sauerkraut
1 tablespoon butter (for sauerkraut)
butter (to add if roast doesn't have enough fat on it)

Steps:

  • DUMPLINGS: Mix and knead flour, prepared instant potatoes and eggs. (See photo #2) Go on, fondle that mass! Add a little water if too dry or flour if too wet. The dough should no longer be sticking tenaciously to your hands or the board as you knead. Be careful not to add too much flour or your dumplings will be too hard. Use your culinary expertise. If, by chance, you have none, welcome to the club. Form dough into a loaf (See photo #3) and set aside. Go put the next load of laundry in the washer and neglect, as usual, folding the dryer load until someone complains so loudly, you have no choice but to submit.
  • PORK ROAST: Place sliced and now screaming garlic into slits you've cut all over roast. Season with the sage and half of each of the following; caraway seeds, salt, pepper and onion powder. Push the laundry out of your mind. It really has no business intruding on your kitchen time, now does it.
  • Sear in skillet on all sides. Remind yourself to use the splatter guard next time you do this and turn the stereo up louder to muffle the sounds of self-flagellating irritation ricocheting through your head as you count the newly forming grease blisters on your hands and forearms.
  • Put into baking pan and cook at 450 degrees for 15-20 minutes. Unless the roast has quite a bit of fat attached to it, add several pats of butter on and around the roast. Remind yourself that there are others in the house who, if they really appreciated you, would be doing that laundry.
  • Lower heat to 375 and cook for 1.5 hours. Lower again after that to 250 for 15 to 30 minutes to finish. Meanwhile, QVC wants you to know.... "You're worth it!" (the diamond earrings...Give in.).
  • Check the roast occasionally and baste with rendered fat, adding butter if needed, but don't tell your doctor or at least don't mention our names.
  • RESUME DUMPLING PRODUCTION WHILE ROAST COOKS: Cut across loaf of dough at 1" intervals (see photo #4). Roll into cylindrical shapes about 1" in diameter x 3-4" long.
  • Boil several at a time, but don't overcrowd, in a large pot until they float like -- well, like things that float. Make sure they don't stick to the bottom while boiling. Cut into a cylinder to check for uniform doneness. The color/shade should be the same throughout the thickness of the dumpling. Remove the remainder of the dumplings and cut each into 1/2" slices, setting them aside in large bowl. Finish boiling/slicing all dumpling cylinders.
  • What laundry?.
  • MEANWHILE: Cook the drained sauerkraut with salt, pepper, the remaining caraway seeds, (we like LOTS!) and dried onion flakes on medium heat with 1 tablespoon butter until lightly browned, stirring occasionally. If your mother in law is present, notice how she periodically cuts her eyes toward you in the kitchen -- in essence, "back seat cooking". If she tries to take over, asking if she can "help you", suddenly remember the laundry. Laugh internally as she slumps toward the laundry room.
  • Check for doneness by cutting into roast. Don't worry about losing any juices - you have butter, one of the major food groups, on your side. Resist the temptation to ram your incisors into roast before it's plated.
  • Serve roast sliced. Use roast juice over sauerkraut and dumplings. Or, for the less socially correct, bathe everything on your plate in good, old-fashioned FAT! Yum!

Tips:

  • For the best flavor, use a pork shoulder roast with a good amount of marbling.
  • Be sure to brown the pork roast well on all sides before braising it. This will help develop a rich flavor.
  • Use a variety of vegetables in the braising liquid, such as carrots, celery, and onions. This will add flavor and depth to the dish.
  • Simmer the pork roast for at least 2 hours, or until it is fall-apart tender.
  • Serve the pork roast with rice, noodles, or dumplings. You can also use the braising liquid to make a gravy.
  • For the dumplings, be sure to use a wonton wrapper that is thin and pliable.
  • Fill the dumplings with a variety of fillings, such as pork, shrimp, or vegetables.
  • Fold the dumplings tightly so that they don't come apart during cooking.
  • Boil the dumplings for 3-4 minutes, or until they are cooked through.
  • Serve the dumplings with a dipping sauce, such as soy sauce or chili oil.

Conclusion:

Bonnie's Chinese Pork Roast and Dumplings is a delicious and easy-to-make dish that is perfect for a weeknight meal. The pork roast is tender and flavorful, and the dumplings are light and fluffy. This dish is sure to be a hit with your family and friends.
