This is one of my great aunt's recipes that classifies as a stand by good old recipe... I recommend maybe using this in a little basket with some small coffee bean bags and some coffee cups... Cute!!!

1 cup cooking oil
1 cup brown sugar
1 cup white sugar
1 cup buttermilk
1 cup coconut (optional)
2 cups chopped pecans
2 1/2 cups self-rising flour
2 eggs
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon vanilla

Steps:

  • Pretty easy directions, really -- just mix all ingredients together and bake in a tube pan at 350 degrees for 1 hr.; I also like the plum cake version of this too, just sub 2 jars of plum baby food for coconut.

Number Of Ingredients 10

1 Cup Butter or Margarine
1 Cup Sugar
1 Cup Brown Sugar, firmly packed
3 Cups Flour
2 Eggs
1 Cup Sour Milk or Buttermilk
1 tsp. Baking Soda
1/4 tsp. Salt
1 Cup Chopped Dates
1 Cup Chopped Nuts

Steps:

  • Soft flour and mix with butter, sugar and brown sugar until fine as corn meal. Remove 1 Cup and save for topping. To remainder, add eggs, milk, baking soda and salt. Mix well and pour into 2 8 x 12 pans. Cover with a cup of chopped dates and a cup of nuts. Pat remaining cup of mix over all. Bake at 375 degrees for 20 to 25 minutes. Freezes well. Better served warm.
