Tips:
- Fresh is best: Use fresh blueberries for the best flavor. If you don't have fresh blueberries, you can use frozen blueberries that have been thawed and drained.
- Toast your pecans: Toasting pecans intensifies their flavor and makes them more fragrant. To toast pecans, spread them out on a baking sheet and bake them at 350 degrees Fahrenheit for 5-7 minutes, or until they are fragrant and golden brown.
- Don't overmix the batter: Overmixing the batter will make the pancakes tough. Mix the batter just until the ingredients are combined.
- Use a hot griddle: A hot griddle will help the pancakes cook evenly. Preheat your griddle or frying pan over medium heat before cooking the pancakes.
- Cook the pancakes slowly: Cook the pancakes over medium heat for 2-3 minutes per side, or until they are golden brown and cooked through.
Conclusion:
These blueberry pecan pancakes are a delicious and easy-to-make breakfast or brunch recipe. The pancakes are light and fluffy, with a sweet and tangy blueberry flavor and a crunchy pecan topping. They're perfect for a special occasion or a lazy weekend morning.
