1 (18 1/2 ounce) yellow cake mix (with pudding in the mix)
1 (8 ounce) package cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
3 eggs
1/2 cup vegetable oil
1 1/4 cups fresh blueberries (See *Note)
1 1/4 cups powdered sugar
1 1/2 tablespoons orange juice
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 325 degrees.
  • In a large bowl beat together 1-2 minutes, the cream cheese, sugar, vanilla extract, and the eggs.
  • Beat in the vegetable oil, and then the cake mix, until all is incorporated.
  • Gently stir in the blueberries by hand.
  • Pour the cake batter into a greased and floured 10-inch Bundt pan.
  • Bake cake in oven for 45-55 minutes, or until a wooden tooth pick inserted in center of cake comes out clean. (I baked my cake for 45 minutes, as my oven does get quite hot.).
  • After removing cake from oven, let cake set in the Bundt pan for 10 minutes.
  • Remove cake from pan, and let cool completely before drizzling on the glaze.
  • Mix the glaze ingredients together, and drizzle it over the cooled cake.
  • Refrigerate the cake until ready to serve.
  • *Note: One (6 oz.) pkg. of fresh blueberries, equals 1-1/4 cups of berries.
  • Also, when making the citrus glaze for the cake, start out with 1 cup of the powdered sugar, then add more if need be, to get the right consistency. I found 1-1/4 cups was just the right amount for me, but it does make quite a bit of the glaze.

1 cup butter, softened
2 cups white sugar
2 eggs
1 cup sour cream
1 teaspoon vanilla extract
1 ⅝ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 cup fresh or frozen blueberries
½ cup brown sugar
1 teaspoon ground cinnamon
½ cup chopped pecans
1 tablespoon confectioners' sugar for dusting

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch Bundt pan.

⅔ cup all-purpose flour
1 teaspoon ground cinnamon
½ cup butter

1 ½ tablespoons cake flour
3 ¼ cups cake flour
1 teaspoon baking soda
1 teaspoon salt

¼ cup buttermilk
1 cup powdered sugar

1 cup blueberries
1 teaspoon lemon zest
4 eggs
1 1/2 cups sour cream (divided use)
1 tablespoon vanilla
2 1/4 cups flour
1 1/2 cups sugar
1 tablespoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
3/4 cup butter
3/4 cup flour
3/4 cup sugar
1/2 cup dark brown sugar (divided use)
2 tablespoons cinnamon
2 tablespoons butter
1 cup pecans, chopped

Steps:

  • Preheat oven to 350°F Place oven rack in lowest position and generously butter a bundt pan.
  • Make Streusel: In small food processor, process flour, sugar, 1/4 cup of dark brown sugar, and cinnamon for 15 seconds. Remove 1-1/4 cups of mixture; add 1/4 cup dark brown sugar to it and set aside. Add cold butter and chopped pecans to mixture in food processor; pulse 10 times and set aside.
  • In small bowl, combine blueberries and lemon zest and set aside. In another bowl, whisk the eggs, 1 cup sour cream and vanilla together and set aside.
  • Mix the flour and rest of dry ingredients together until blended in mixer. Add the butter and remaining sour cream and blend on low until ingredients are moistened.
  • Gradually add egg mixture in 3 additions, beating 20 seconds after each addition. Increase speed and beat till batter is light and fluffy.
  • Spread 2 cups of batter in pan and top with 1/2 cup blueberries. Sprinkle with half of sugar streusel. Repeat layers. Spread with remaining batter and top with pecan streusel.
  • Bake 50 to 60 minutes or until toothpick comes out clean when inserted in the middle. Cool on wire rack 30 minutes. Invert out on plate and turn so streusel is on top. Cool 2 hours. Wrap in foil and store at room temperature.
