Steps:
- Preheat oven to 400 degrees F.
- In a small bowl, combine the Italian seasoning, black pepper, paprika, salt, and cayenne. Season each piece of fish with the rub, pressing it in with your hands.
- Heat a large skillet over medium-high heat and add the butter and oil. When the butter has melted, add the salmon and cook about 2 minutes per side. The rub will give it a nice color.
- Transfer the whole pan to the oven and cook for another 4 to 6 minutes.
- For the sauce:
- Place the white wine into a medium saucepan and reduce by half. Add the heavy cream and allow to reduce.
- Add the blue cheese and whisk until smooth. It will get nice and velvety.
- Serve on top of the salmon.
Tips:
- For the best results, use fresh salmon fillets. Frozen salmon can be used, but it should be thawed completely before cooking.
- If you don't have blue cheese on hand, you can substitute another type of cheese, such as cheddar, Parmesan, or Gruyère.
- To make a crispy crust on the salmon, be sure to pat it dry before cooking. You can also brush it with melted butter or olive oil.
- Don't overcook the salmon! It should be cooked through but still moist and flakey. The internal temperature of the salmon should reach 145 degrees Fahrenheit.
- Serve the salmon immediately with your favorite sides. Some popular sides for salmon include roasted vegetables, mashed potatoes, or rice.
Conclusion:
Blue cheese baked salmon is a delicious and easy-to-make dish that is perfect for any occasion. It's a great way to enjoy salmon, and the blue cheese crust adds a unique and flavorful touch. Whether you're serving it for a weeknight dinner or a special occasion, this dish is sure to please everyone at the table.
