2 pounds salmon fillets
2 cloves garlic, crushed
1 teaspoon dried dill weed
salt to taste
ground black pepper to taste
1 cup shredded Cheddar cheese
6 green onions, chopped

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Place the salmon on a large piece of foil, and season with garlic, dill, salt, and pepper. Seal foil around the salmon. Place on a baking sheet.

4 -6 salmon fillets
1/4-1/2 cup blue cheese dressing (the higher quality the better)
salt and pepper
1/4 cup blue cheese, crumbles (optional)

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Place salmon fillets in pan.
  • 3. Lightly season both sides with salt and pepper.
  • 4. Spoon 1 -2 tablespoons of blue cheese dressing over the top of the salmon. Put enough to cover the top of the fillet.
  • 5. Bake for 25 minutes (or until the fish flakes easily) in oven.
  • 6. Option using blue cheese crumbles: Bake for 20 minutes, spread the blue cheese crumbles on top and bake another 5 minutes.

1 tablespoon italian seasoning
1 teaspoon cracked black pepper
2 tablespoons paprika
2 tablespoons salt
1 tablespoon cayenne pepper (or more to taste-Aaron uses 1 1/2 tbls.)
2 tablespoons butter
1 tablespoon grapeseed oil, for frying (or olive oil)
4 (6 ounce) portions skinless and boneless salmon fillets
1/4 cup white wine
1/2 cup heavy cream
3/4 cup blue cheese, crumbled

Steps:

  • Preheat oven to 400 degrees F.
  • In a small bowl, combine the Italian seasoning, black pepper, paprika, salt, and cayenne. Season each piece of fish with the rub, pressing it in with your hands.
  • Heat a large skillet over medium-high heat and add the butter and oil. When the butter has melted, add the salmon and cook about 2 minutes per side. The rub will give it a nice color.
  • Transfer the whole pan to the oven and cook for another 4 to 6 minutes.
  • For the sauce:
