2 Tablespoons baking powder (*aluminum free)
3/4 teaspoon salt
1/2 teaspoon cracker black pepper
1 teaspoon paprika
1 teaspoon garlic powder
1/3 cup Frank's Wings Hot Sauce
1 1/2 cups light brown sugar
1 Tablespoon water

Steps:

  • Adjust your oven rack to the upper-middle position. Preheat oven to 425 degrees F.
  • Line a baking sheet with aluminum foil and place a wire rack (I use a cooling rack) on top. Spray the rack with non-stick spray.
  • Use paper towels to pat the wings dry and place them in a large bowl. It's important to dry them REALLY well!

1 tablespoon vegetable oil
2 pounds chicken wings, separated into drumettes and flats
1 tablespoon baking powder
1/2 cup light brown sugar
2 tablespoons kosher salt
1 tablespoon butcher's grind cracked black pepper
2 tablespoons granulated sugar
1 tablespoon Hungarian paprika
1 tablespoon chili powder
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
Pinch of celery seeds

Steps:

  • For the wings: Preheat your oven to 450 degrees F. Line a rimmed baking sheet with foil and brush the foil with the oil.
  • Pat the wings dry with paper towels, then sprinkle with the baking powder and toss to evenly coat in a large mixing bowl. Spread the wings evenly on the prepared baking sheet. Bake until golden brown, crispy and cooked through, 25 to 30 minutes, flipping halfway through.

2 lbs chicken wings, tips removed
2 tablespoons vegetable oil
3 garlic cloves, minced
1 tablespoon fresh ginger, minced
1 teaspoon red chili pepper flakes
1 bunch green onion, white and green parts separated and sliced
1/4 cup soy sauce
1/2 cup honey
1 lime, juiced
1 tablespoon sesame oil
2 teaspoons cornstarch
1 tablespoon water
salt, as needed
ground black pepper, as needed

Steps:

  • Put the chicken wings on a greased baking sheet with sides. Sprinkle with salt and pepper and bake in a 350 degree oven for 20 minutes.
  • Meanwhile, in a medium-size saucepan put the oil, garlic, ginger, chili flakes, and white part of the green onion. Heat over medium-high heat for about one minute.
  • Add the soy sauce, honey, lime juice, and sesame seed oil. Bring mixture to a boil. Make a slurry by combining the cornstarch and water.Add the slurry to the saucepan and cook just until the sauce thickens, stirring constantly. Remove from heat.
  • After 20 minutes of cooking the chicken, remove from the oven and pour the sauce over the chicken (or dip each chicken wing in the sauce). Bake the chicken at least 20 minutes until the wings are cooked through. Serve garnished with the green part of the onion.
  • Notes: I think that the original recipe called for 2 teaspoons red chili flakes, but that might have been too hot for me. I cooked the wings longer than the second 20 minutes to really get the sauce more baked into the chicken.

12 chicken wings or 24 chicken drummettes
2 tablespoons olive oil
1 tablespoon garlic powder or 1 tablespoon granulated garlic
1 teaspoon salt
1/2 teaspoon black pepper
1 cup marinara sauce
2 tablespoons hot sauce, to taste
4 garlic cloves, chopped
chopped fresh parsley, for garnish

Steps:

  • Preheat oven to 400 degrees F.
  • If using whole wings, disjoint wings and remove tips; you should have 24 drumettes.
  • In a large bowl, toss the chicken with the olive oil, garlic powder, salt and pepper. Place on a rack in a baking pan.
  • Roast the chicken wings or drumettes in preheated oven until done, about 30 minutes.
  • Meanwhile, to make sauce, place the marinara sauce, hot sauce and garlic in a blender or food processor and blend to puree garlic.
