CREAMY BLUE CHEESE DIP WITH WALNUTS

Creamy Blue Cheese Dip With Walnuts image

Blue cheese can be a polarizing ingredient, but the sweetness of toasted walnuts rounds out the sharpness of the cheese in this creamy dip. If serving this dip to friends, surround it with large pieces of cabbage, sliced celery sticks and a sleeve of saltine crackers - and make extra, because it can disappear quickly. But it's built for more than entertaining guests: Slather it on a potato bun in a chicken cutlet sandwich, or use it to dress up a BLT.

GRANDMA'S STUFFED CELERY

Grandma's Stuffed Celery image

My grandma always made stuffed celery at Thanksgiving and Christmas. As kids, we were always so hungry before the holiday meal we would sneak and get a piece of celery to curb our appetite. It was nearly all gone by meal time and we always got fussed at with hint of a grin from Grandma. Now I never have holiday meals without it!

Tips:

  • Choose the right celery: Select firm, crisp celery stalks with no blemishes or bruises. The heart of the celery, which is the innermost stalk, is the most tender and flavorful part.
  • Wash the celery thoroughly: Rinse the celery stalks under cold water to remove any dirt or debris. You can also peel the celery stalks if desired, but this is not necessary.
  • Cut the celery into even-sized pieces: This will help them cook evenly. If you are making stuffed celery, cut the celery stalks into 3-4 inch pieces.
  • Prepare the bleu cheese mixture: In a small bowl, combine the bleu cheese, mayonnaise, sour cream, and any other desired seasonings. Mix until well combined.
  • Stuff the celery: If you are making stuffed celery, spread a thin layer of the bleu cheese mixture on the inside of each celery stalk. Then, fill the celery stalks with your favorite fillings, such as crumbled bacon, chopped walnuts, or diced red pepper.
  • Chill the celery: Once the celery is prepared, chill it in the refrigerator for at least 30 minutes before serving. This will help the flavors to meld and the celery to become more crisp.

Conclusion:

Bleu cheese and celery sticks are a classic appetizer that is both easy to make and delicious. With just a few simple ingredients, you can create a snack or side dish that is sure to please everyone. Whether you are serving them at a party or enjoying them as a quick snack, bleu cheese and celery sticks are a great way to enjoy the fresh flavors of celery and the tangy, creamy flavor of bleu cheese.
