CAJUN BLACKENED SALMON
Yet another recipe from my mother-in-law, who is probably the best cook that I personally know. This is, hands down, our favourite way to eat salmon in our house - and we eat a lot of it! The spice portion can be doubled and stored for later - I typically double or triple the recipe and store it in an airtight jar so that it is available whenever I want it.

Steps:
- In a small bowl, add the paprika, cayenne, thyme and oregano and salt and mix to blend. Put the mixture on a plate or other flat surface and coat the portions of salmon, 1 at a time, on the flesh side only.
- Heat a large heavy-bottomed pan or cast iron skillet over medium heat, and add the oil. When the oil begins to smoke quite heavily shut the heat off under the pan. Add the salmon, 1 at a time, in a single layer, flesh side down, in the oil. Turn the heat back on under the pan and cook for 2 to 3 minutes. Use a spatula to turn the salmon to the other side. Cook the salmon over medium heat, until the skin becomes crispy, about 5 to 6 minutes.
- Arrange the salmon on a platter, sprinkle with lemon zest and lemon juice and serve immediately.

- Coat a baking sheet with the coconut oil spray, then place the seasoned salmon on the sheet and bake it for 25 to 30 minutes, or until the salmon is firm but not dry.
- While the salmon is baking, prepare the salsa. Combine all the salsa ingredients in a bowl and let the flavors meld at room temperature until the salmon is ready. Top the cooked salmon with half the salsa, and reserve the other half in the fridge.
BLACKENED SALMON FILLETS
This is a recipe I found on All Recipes. It's SPICY, tasty and a delicious way to serve salmon. I've altered the recipe quite a bit but will spell out both variations so you can make this recipe according to what suits your family. For instance, this recipe calls for a 1/2 cup of butter but I don't use any...just olive oil to brush the fillets with. Also, this recipe states to cook the fish entirely on the stove but I blacken for a few minutes and then bake at 400 for 10 minutes for perfectly cooked fish without an overly smoky kitchen!

Steps:
- In a small bowl, mix paprika, cayenne pepper, onion powder, salt, white pepper, black pepper, thyme, basil and oregano.
- Brush salmon fillets EVOO until moist, and sprinkle evenly with the cayenne pepper mixture. Mist with EVOO spray (I use Garlic flavored EVOO spray).
- In a large, heavy skillet over high heat, cook salmon, until blackened, 2 to 5 minutes. Turn fillets, brush with remaining EVOO , and continue cooking until blackened and fish is easily flaked with a fork.
- At this point, I bake at 400 for 10 minutes or until desired doneness (I like mine well done). If you don't like yours well done, skip the baking stage.
THE BEST CAJUN BLACKENED SALMON EVER.
We eat a lot of salmon (at least once a week) and this is by far my favorite way of preparing it. It's really quite simple, and the end result is so delicious. The sweetness of the apple juice/white wine combined with the spiciness of the Cajun seasoning is amazing. The blackened texture of the fish is also great. Not your typical boring salmon!

Steps:
- Preheat oven to 400F. Set an oven rack in the lower-middle position.
- Prepare the salmon: Use 1 tablespoon of the olive oil to grease the bottom of a rimmed sheet pan. Place the salmon, skin side down, on a flat surface and season with salt. In a small bowl, mix together the cayenne pepper, paprika, garlic powder, and mustard and set aside. Sift an even layer of the spices over the salmon and arrange filets skin side down, on the baking sheet, with space between each.
- Prepare the kale: In a medium bowl, massage the kale with the remaining 3 tablespoons olive oil and the garlic. Arrange it all around (but not covering) the fish on the pan. Sprinkle the oregano on top of the salmon.
- Cook the salmon: Place the pan in the lower-middle rack and roast for 10 to 12 minutes for medium to medium-rare salmon. (For well-done fish, leave in the oven an additional 5-8 minutes.) Remove the pan from the oven and sprinkle all of the lime zest and juice over the fish. Drizzle with honey. Serve immediately.

Steps:
- Season the salmon on both sides with salt, pepper and the Cajun seasoning; set aside. (If your Cajun seasoning contains salt, do not season the salmon with additional salt.) Heat 1 tablespoon olive oil in a medium saucepan over medium-high heat. Add the celery and a pinch of salt. Cook, stirring, until the celery starts to soften, about 4 minutes. Stir in 2 sliced scallions and the garlic; cook until softened, about 1 minute. Add the black-eyed peas and chicken broth. Cover and bring to a boil over high heat, then uncover and reduce to a simmer. Mash about 1/4 cup of the beans against the side of the pan with a wooden spoon. Simmer until the broth is thickened, 8 to 10 minutes.
- Meanwhile, heat a large nonstick skillet over high heat. Rub the remaining 1 tablespoon olive oil all over the salmon. Add to the skillet, curved-side down; reduce the heat to medium high and cook until blackened on the bottom, 3 to 5 minutes. Flip, reduce the heat to medium and continue cooking until browned on the other side, 2 to 3 minutes for medium rare to medium.
- Add the spinach and hot sauce to the beans; stir until wilted, about 30 seconds. Add more salt and pepper, if needed. Divide the beans and salmon among shallow bowls. Top with the remaining sliced scallion.

Steps:
- Each steak works best if it is about 3/4 inches thick, especially when using a cast iron skillet. Coat each stake with the butter (or olive oil) and let sit while the rest of the butter/olive oil heats up in the pan. After about 10 minutes, coat each stake on both sides with the seasoning mix and let it cook for around 2 minutes uncovered. Afterwards, flip it over and cook the stakes until they are a nice pink color inside. The time that it takes to cook each stake determines on how large they are.

Steps:
- Remove salmon from package and rub with blackening seasoning on skin free side.
- Use just enough to cover the piece of fish but not so much that you can't see the pink behind the seasoning.
- Heat grill pan on med heat and brush lightly with olive oil (very lightly) Place salmon skin side down on pan and cook on med heat until half of the salmon (from the bottom up) is opaque.
- Flip salmon and remove skin (it will peel off very easily and usually in one piece- I place it in a small plastic bag and tie it before dropping it in the garbage can to reduce fishy odors) Cook another 5-8 minutes until the entire piece of fish is opaque and runs with a white milk like substance (healthy omega fatty acids) Serve immediately with rice or potato and veggie of your choice for a healthy meal that tastes like you're at a restaurant even when you cooked it yourself!

Tips:
- Choose fresh, high-quality salmon: The fresher the salmon, the better it will taste. Look for salmon that is firm to the touch and has a bright, vibrant color.
- Use a cast iron skillet: A cast iron skillet is the best choice for cooking blackened salmon because it retains heat well and creates a nice, even sear.
- Season the salmon generously: Blackened salmon is typically seasoned with a combination of spices, such as paprika, garlic powder, onion powder, cayenne pepper, and black pepper. Be sure to season the salmon on all sides.
- Get the skillet nice and hot before adding the salmon: This will help to create a nice, crispy sear on the outside of the salmon.
- Cook the salmon for a short amount of time: Blackened salmon is cooked quickly, so be careful not to overcook it. Cook the salmon for 3-4 minutes per side, or until it is cooked through.
- Serve the salmon immediately: Blackened salmon is best served immediately after it is cooked. Serve it with a squeeze of lemon, a dollop of tartar sauce, or your favorite side dish.
