Steps:
- Pour about 3 inches of oil in a deep fryer or large, heavy pot and heat to 375 degrees F. Preheat the oven to 250 degrees F.
- Melt the butter in a small saucepan over medium-low heat. Add the smashed garlic and swirl the pot around to infuse the garlic flavor into the butter. Slice the French bread in 1/2 lengthwise and brush the top and insides with the garlic butter. Stick the bread in the oven for 5 minutes to warm it through.
- Season both sides of the catfish fillets with a fair amount of salt and pepper. In a wide bowl, mix the milk and egg together, season with salt and pepper. Mix the cornmeal, flour, cayenne, salt and pepper in a pie dish using a fork. Dip the catfish in the wet batter, then dredge in the dry; being sure to cover the fillets completely. Gently drop the fish in the hot oil in batches so the pan is not overcrowded. Fry the fillets for 3 minutes and then drain on a platter lined with paper towels; sprinkle with salt while they are still hot.
- To assemble the sandwich, put the pickles across the bottom 1/2 of the bread, lay the fried catfish on top. Spoon a small mound of slaw on top of the catfish and close up the sandwich with the top 1/2 of the bread. Cut into portions and serve immediately with hot sauce and lemon on the side.
- Combine the cabbage, carrot, red onion, green onions, and chile in a large bowl.
- In another bowl, mix the mayonnaise, mustard, vinegar, lemon juice, and sugar; stirring to incorporate. Pour the dressing over the cabbage mixture and toss gently to mix. Season the cole slaw with celery seed, hot sauce, salt, and pepper. Chill for 2 hours in refrigerator while frying the catfish.
CAJUN BLACKENED CATFISH
This is a recipe that I obtained from a very good Cajun friend who is a native of Lafayette, Louisiana. His family adopted me (friendly) many years ago and we have swapped Cajun and Creole recipes through the years.

Steps:
- In a shallow bowl, mix together the black pepper, garlic powder, onion powder, paprika, parsley, cayenne pepper, kosher salt, oregano, and thyme until thoroughly combined. Press the catfish fillets into the spice mixture to thoroughly coat.
- Arrange a portable heat source outdoors, such as a butane burner or side burner of a gas grill. Melt butter in a glass or metal bowl. Light the burner, and place a large cast-iron skillet onto the burner over high heat. Pour about 1/4 cup of melted butter into the skillet; set remaining 1/2 cup of butter aside.
- When the butter in the skillet is smoking hot, lay the catfish fillets into the skillet. Cook until the spices are burned onto the fillets and the catfish is opaque and flaky inside, about 3 minutes per side. Don't breathe smoke from burning spices. To serve, pour remaining 1/2 cup of butter over the catfish.

BLACKENED CATFISH CREOLE STYLE (SALLYE)
Instead of pan frying my catfish I bought yesterday, I created and used this recipe to cook it. It turned out really great. If you like Creole cooking and catfish, this is a perfect blend sure to please you. Bonus: It is heathier for you than fried fish. Hope you try it.

Steps:
- 1. Rinse the catfish fillets and pat dry with paper towels.
- 2. Place the spices in a spice or coffee grinder and grind until they are powdery. Let set for a minute until dust settles.
- 3. Line a cooking sheet or dish with foil or parchment paper. .
- 4. Place butter in microwave for 10-15 seconds, just long enough to melt. Remove from microwave and add the tequila, liquid smoke (optional), and spices to the butter, and whisk until well blended.
- 5. Heavily coat each fillet on all sides with the butter/spice mixture. Place each coated fillet on the sheet. Place in fridge for about 30 minutes before cooking.
- 6. Place cast iron skillet on medium high heat. When skillet is smoking hot, carefully slide the fillets into the skillet. Cook for 3-4 minutes per side. Flip the fish carefully with a wide spatula to keep it from falling apart.
- 7. IMPORTANT: DO NOT TRY TO FLIP THE FISH IF IT IS STILL STICKING TO THE SKILLET. IT WILL RELEASE WHEN IT IS READY TO BE TURNED.
- 8. !!! SMOKE ALARM ALERT !!! IF YOU DON'T TURN YOUR VENT FAN ON AND OPEN A WINDOW, YOUR SMOKE ALARM WILL PROBABLY SCREAM AT YOU. IF YOU HAVE A SMALL FAN, YOU MIGHT WANT TO TURN IT ON TO ALSO DEFLECT SOME OF THE HEAT AND SMOKE.
- 9. Additional note: You can use this same recipe to broil this fish in your oven. Same instructions apply, cook each side under broiler for -4 minutes, turning once. .
- 10. Serve immediately with your choice of sides. Garnish with lemon slices https://www.justapinch.com/recipes/sauce-spread/dip/tartar-sauce.html?p=67 https://www.justapinch.com/recipes/sauce-spread/dressing/cocktail-sauce-by-sallye.html?p=64
BLACKENED CATFISH PO'BOY WITH LIGHT TARTAR SAUCE
Creole seasoning gives the fish in this New Orleans sandwich a zesty kick, and because the fish is broiled instead of fried, it's a lighter option than what you might find in a restaurant.

Steps:
- Heat broiler; coat the rack of a broiler pan with cooking spray. In a shallow bowl, stir together cornmeal, paprika, thyme, cayenne, 1 tablespoon salt, and 1/2 teaspoon ground pepper.
- Dredge fillets in cornmeal mixture, turning to coat. Shake off excess, and place on prepared rack; broil until opaque throughout and blackened on the outside, 10 to 12 minutes. Serve immediately, with lemon wedges, if desired.
Tips:
- For the freshest catfish, choose fillets that are firm and have a mild, sweet smell. Avoid fillets that are slimy or have a strong odor.
- To prevent the catfish from sticking to the pan, make sure the pan is hot before adding the fish and don't overcrowd the pan.
- The blackened seasoning can be adjusted to taste. For a milder flavor, reduce the amount of cayenne pepper. For a spicier flavor, add more cayenne pepper or other chili powder.
- The tartar sauce can be made ahead of time and stored in the refrigerator for up to 2 weeks.
- When assembling the po'boys, be sure to use a sturdy bread that can hold up to the catfish and toppings.
Conclusion:
The blackened catfish po'boy is a delicious and easy-to-make sandwich that is perfect for a casual meal. The catfish is blackened to perfection and served on a toasted bun with tartar sauce, lettuce, and tomato. This sandwich is sure to be a hit with everyone who tries it.
