1 cup fresh blackberries
1 cup raspberries
2 cups rhubarb, cut into 1/2 inch pieces
¾ cup white sugar
¼ cup all-purpose flour
2 cups all-purpose flour
1 teaspoon salt
⅔ cup shortening
2 tablespoons butter
4 tablespoons ice water
1 tablespoon butter, melted
1 teaspoon lemon juice
1 ½ tablespoons half-and-half cream
2 tablespoons white sugar

Steps:

  • To Make Filling: In a medium bowl, combine blackberries, raspberries, and rhubarb. In a separate bowl, mix together 3/4 cup sugar and 1/4 cup flour. Sprinkle over fruit mixture and stir gently. Cover bowl and refrigerate overnight.
  • To Make Crust: In a large bowl, mix 2 cups flour with salt. Cut in shortening and 2 tablespoons butter until texture is like coarse cornmeal. Place 1/3 of mixture in a separate bowl. To the smaller portion, add water and mix to form a paste. Add this mixture back to the rest of flour mixture and stir just until dough forms a ball. Allow to rest at least 20 minutes before rolling out. Divide dough in half. Roll out bottom crust and place in 9 inch pie pan.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix 1 tablespoon melted butter and lemon juice into fruit filling, then spoon into pastry-lined pie pan. Roll out top crust and place over filling. Crimp edges and cut steam vents in top. Brush lightly with half and half and sprinkle lightly with sugar.
  • Bake in preheated oven for 10 minutes. Reduce temperature to 350 degrees F (175 degrees C) and bake an additional 40 to 50 minutes, until crust is golden brown.

BLACKBERRY PIE

Blackberry Pie image

While this pie is a favorite in Washington state, it is also a classic across the country. The cut-out crusts update the look of the old standard, but the taste is just as sweet, tart and velvety as you remember.

Categories     dessert

Time 2h35m

Yield 6 servings

Number Of Ingredients 10

6 cups blackberries
1 cup granulated sugar
1 teaspoon pure vanilla extract
1 teaspoon lemon zest plus 1 tablespoon lemon juice
One 14.1-ounce box refrigerated rolled pie crusts (2 crusts)
All-purpose flour, for dusting
1/4 cup cornstarch
1 tablespoon unsalted butter, cut into small pieces
1 large egg, lightly beaten
1 tablespoon turbinado or raw sugar

Steps:

  • Toss together the berries, granulated sugar, vanilla and lemon zest and juice in a large bowl. Let stand at room temperature for 20 minutes.
  • Preheat the oven to 400 degrees F.
  • Meanwhile, unroll one pie crust and press it into a 9-inch pie plate. Roll out the other crust on a floured cutting board. Using a 2-inch round biscuit cutter, cut the entire crust into rounds, rerolling until all the dough is used (about 28 rounds).
  • Sprinkle the cornstarch over the berry mixture and toss to combine. Pour the berry mixture into the crust and spread into an even layer. Dot the top with the butter pieces. Brush the border of the dough lightly with the egg wash. Place the rounds around the border of the pie plate, overlapping them slightly and using the egg wash as an adhesive when necessary. There will be empty space in the center. Crimp the edge of the pie. Brush the entire crust with the egg wash and sprinkle with the turbinado sugar.
  • Put the pie plate on a baking sheet and bake until the center is set and the crust is golden brown, 45 to 50 minutes. Put on a wire rack to cool completely. Serve at room temperature.

Categories     dessert

Time 1h15m

Yield five 8-inch deep pies

Number Of Ingredients 15

1 ounce fresh mint
3/4 cup sugar
1 quart heavy cream
2 pounds all-purpose flour
2 tablespoons salt
1 teaspoon ground pepper
1 teaspoon sugar
1 pound shortening
2 pounds whole blackberries
2 pounds strawberries, sliced
2 pounds rhubarb, sliced into 1/4- to 1/2-inch pieces
1 lemon, zest and juice
1 lemon, zest and juice
4 cups sugar
3 tablespoons tapioca starch

Steps:

  • For the whipped cream: Combine the mint, 1 cup water and 1/2 cup of the sugar in a small saucepan over medium heat; cook until sugar dissolves. Let the mixture cool before using. In a large bowl, whip the cream and remaining sugar until it forms stiff peaks. Add the simple syrup and gently fold into the cream until combined. Chill until ready to use.
  • For the crust: Mix the flour, salt, pepper and sugar together in a mixing bowl. Add the shortening and mix with hands until it comes together into pieces the size of bb's. Add cold water little by little until the dough comes together (you can always add water but you can't take it away). Ball up the dough into 6 baseball-size crusts and roll each one out.
  • For the filling: Put the blackberries, strawberries, rhubarb, lemon zest and juice into a large bowl. Add the sugar and tapioca starch and combine.
  • To assemble: Preheat the oven to 350 degrees F. Line five 8-inch deep pie pans with the pie crust. Divide the filling evenly among the pans. Bake until juice is coming out like molten lava, about 45 minutes. Top with the mint whipped cream.

BLUEBERRY RHUBARB PIE

Blueberry Rhubarb Pie image

The baker and pie coach Kate McDermott has many tricks to figure out when a pie is done, but her favorite is what she calls "the heartbeat of the pie." She listens for a sizzle that tells her that the fat in the crust is cooking the flour, and for a thumping sound that indicates that the simmering liquid is bumping up against the top crust. Also, watch for bubbling: This will tell you that the temperature is high enough that the thickeners have dissolved into the filling. All-berry pies can be too sweet and soft, so the tart crunch of rhubarb makes an ideal complement, especially in early spring. This glowing purple-magenta filling is quite spectacular.

Categories     pies and tarts, dessert

Time 1h

Yield 1 9-inch pie

Number Of Ingredients 11

Dough for a double-crust pie, chilled (see recipe; be sure to double it)
2 1/2 cups/312 grams rhubarb, trimmed and cut into 1/2- to 1-inch lengths
1 1/2 cups/226 grams blueberries or blackberries
3/4 cup/150 grams granulated sugar, more for sprinkling
2 tablespoons all-purpose flour
2 tablespoons quick-cooking tapioca (also called instant, minute or small pearl tapioca)
1/3 teaspoon salt
Pinch of freshly grated nutmeg
1 teaspoon fresh lemon juice
1/2 tablespoon cold unsalted butter
1 egg white, whisked with 1 tablespoon water

Steps:

  • Heat oven to 425 degrees. Roll out both crusts. Line a deep 9-inch pie pan with the bottom crust and return both crusts to the refrigerator.
  • In a medium bowl, combine rhubarb, berries, sugar, flour, tapioca, salt, nutmeg and lemon juice. Toss to coat and combine, then scoop into waiting bottom crust. The fruit should come up to within 1/2-inch of the rim of the pan; do not overfill. If necessary, add more or subtract some of the fruit. Break the butter into pieces and dot over the fruit.
  • Lay top crust over filling. Trim excess dough from the edges and crimp, then cut 6 or 7 vents on top. Brush a light coating of egg wash over the crust, including the edges.
  • Bake for 20 minutes. Reduce heat to 375 degrees. Bake another 25 minutes, then open the oven and quickly sprinkle the crust with a thin coating of granulated sugar. Bake another 10 to 15 minutes, or until you see steady bubbling in the filling coming through the vents.
  • Remove pie from oven and listen to it: if the crust is sizzling, and the filling is audibly bubbling against the top crust, it is done. Let cool completely before serving.

WILD BLACKBERRY & RHUBARB PIE

WILD BLACKBERRY & RHUBARB PIE image

Categories     Berry     Fruit     Dessert     Bake     Wheat/Gluten-Free     Summer

Yield 10 slices

Number Of Ingredients 16

Never Fail Pie Crust
2 cups all-purpose GF flour
1/2 Tbsp sugar (or honey)
1/2 tsp salt
1/2 tsp baking powder
3/4 cup cold butter or shortening, divided
1 egg
1/2 Tbsp vinegar
1/4 cup luke warm water
Wild Blackberry & Rhubarb Filling
3 cups fresh blackberries
2 cups fresh rhubarb, diced
3/4 cup cane sugar (or honey)
1/4 cup all-purpose GF flour
Optional: 1 tsp ground ginger or 1 tsp ground cinnamon
2 Tbsp almond milk

Steps:

  • To make the pie crust: combine flour, sugar, salt and baking powder in a mixing bowl. In a small bowl, whisk together egg, vinegar and water. Cut in about 2/3 cup (9-10 Tbsp) butter or shortening into dry ingredients until mixture is crumbly. Pour in egg mixture and carefully mix until dough ball forms. Add more water or flour to get desired dough texture. Divide dough in half. Place dough ball onto a lightly floured surface. Using a rolling pin, roll out dough until about 1/4" thick. Gently lay pie crust into a 9" pie plate. Reserve the remaining dough for the top of the pie. After pie has been filled, roll out remaining dough and cut as desired for topping - lattice, whole, shapes, etc. Bake according to pie directions. *TIP: To bake an empty pie crust for a cold or pudding filling, bake at 350F for about 10-15 minutes.* To make filling: combine berries, rhubarb, sugar and flour into a large bowl until well blended. Pour into uncooked pie crust. Add remaining 2-3 Tbsp of butter or shortening on top of berries in little pieces. Top with remaining pie crust if desired. Brush top of pie with almond milk. Bake at 350F for about 50 minutes. Filling should be bubbly and crust should be slightly brown. If edges of pie start to brown too quickly, cover with foil. Let pie cool about 10-20 minutes before cutting and serving. *Tip: place a large cookie sheet under pie plate while baking to catch any overflow of berry juice - it will burn quickly and your whole kitchen will smell terrible (not to mention the smoke detector. I only tell you this out of lots of experience.* *Note: Got leftover pie crust? Form together and roll out again on a floured surface. Cut or shape as desired. Place pie crust pieces on a large cookie sheet and sprinkle with sugar and cinnamon. Bake at 350F for about 10-15 minutes, watching carefully to prevent burning.

Tips:

  • To save time, use a pre-made pie crust or puff pastry sheet.
  • If the rhubarb is very tart, you may want to add more sugar to the filling.
  • Be sure to drain the blackberries well before adding them to the filling, or the pie will be too runny.
  • Bake the pie until the crust is golden brown and the filling is bubbling.
  • Let the pie cool completely before serving, or the filling will be too runny.
  • Serve the pie with a scoop of vanilla ice cream or whipped cream.

Conclusion:

This blackberry rhubarb pie is a delicious and easy-to-make dessert that is perfect for any occasion. The combination of sweet blackberries and tart rhubarb is a perfect balance, and the flaky crust makes it irresistible. Whether you are a beginner baker or a seasoned pro, this pie is sure to impress.
