Yield Serves 8 side-dish or main-course servings

Number Of Ingredients 18

4 bacon slices, chopped
1 1/2 sticks (3/4 cup) unsalted butter, cut into tablespoon pieces
2 pounds yellow onions (8 medium), halved lengthwise and thinly sliced crosswise
1 1/4 teaspoons table salt
1 (10-ounce) box frozen black-eyed peas, thawed, or 1 (15-ounce) can, rinsed and drained
1 medium red onion, finely chopped
1/4 cup finely chopped celery
1 tablespoon finely chopped garlic
2 1/2 cups Arborio rice (17 1/2 ounces)
1/2 cup dry white wine
2 ounces sliced pancetta (Italian unsmoked cured bacon), cut into 1/4-inch dice (1/2 cup)
1 tablespoon chopped fresh lemon thyme or regular thyme
1/2 teaspoon dried hot red pepper flakes
8 cups chicken stock or chicken broth
1/4 cup fresh lemon juice
3/4 teaspoon coarsely ground black pepper
Coarse sea salt to taste
3 tablespoons finely chopped fresh parsley

Steps:

  • Cook chopped bacon in a 12-inch heavy skillet over moderate heat, stirring occasionally, until bacon is crisp, about 6 minutes. Transfer bacon with a slotted spoon to paper towels to drain.
  • Add 2 tablespoons butter to bacon fat in skillet and heat over moderate heat until foam subsides, then cook sliced onions with 1/2 teaspoon table salt, stirring occasionally, until golden, 20 to 25 minutes. Reserve 1/2 cup caramelized onions in a bowl and set remaining caramelized onions aside in skillet.
  • While onions are caramelizing, simmer frozen black-eyed peas (if using) in 2 cups water in a 2-quart saucepan, uncovered, over moderate heat until just tender, about 15 minutes, and drain peas in a colander.
  • Cook red onion and celery in 2 tablespoons butter in a 5- to 6-quart heavy pot over moderate heat, stirring occasionally, until softened, 5 to 7 minutes. Add garlic and cook, stirring, until fragrant, about 1 minute. Add rice and cook, stirring, 1 minute. Stir in wine and boil over moderately high heat until wine is reduced by half, about 2 minutes.
  • Add caramelized onions from skillet, black-eyed peas (cooked frozen ones or canned), pancetta, thyme, red pepper flakes, remaining 3/4 teaspoon table salt, and 4 cups chicken stock and briskly simmer, uncovered, over moderate heat, stirring occasionally, until most of liquid is absorbed, 15 to 20 minutes. Add remaining 4 cups chicken stock and briskly simmer, stirring occasionally, until most of liquid is absorbed and rice is just tender and creamy-looking, 15 to 20 minutes. Add remaining 8 tablespoons butter (1 stick) and lemon juice, stirring until butter is incorporated.
  • Divide risotto among 8 shallow bowls or dinner plates and sprinkle with bacon. If serving with verbena-brined pork chops (recipe precedes), top with chops. Sprinkle with coarse black pepper and sea salt, then top each serving with about 1 tablespoon reserved caramelized onion and sprinkle with chopped parsley.

SOUTHERN RISOTTO

Categories     side-dish

Time 1h15m

Yield 4 servings

Number Of Ingredients 12

2 tablespoon coconut oil
1 1/2 cups short-grain brown rice
1/4 cup plus 1 tablespoon bourbon whiskey
6 1/2 cups mushroom broth or vegetable broth, heated
1 cup broccoli stems, peeled, small diced
1 cup asparagus, no tips, small diced
1 cup fresh peas
3 green onions, green parts only, sliced
1 cup shredded aged goat cheese
1 teaspoon grated orange zest
1 orange, juiced (about 1/2 cup)
Salt and pepper

Steps:

  • Melt the coconut oil in a 10-inch, high-sided saute pan over medium heat. Add the brown rice, stir to coat, and allow to toast, about 1 minute. Carefully (in case it flames) add the 1/4 cup bourbon, stirring to fully incorporate. Once the bourbon is mostly absorbed, add the broth, 1/2 cup at a time, stirring constantly. Wait until the liquid has evaporated, before adding another 1/2 cup. (You will have to babysit this a bit, but just be patient.) After you have added about 4 cups of the broth, add the broccoli, asparagus and peas. Continue adding the broth in 1/2 cup increments; you will notice the mixture starting to thicken. Stir and add the remaining broth. When the rice is tender, after about 45 minutes, stir in the goat cheese, orange zest, orange juice, and the remaining 1 tablespoon bourbon. Season to taste with salt and pepper. Serve immediately.

BAKED RISOTTO WITH GREENS AND PEAS

Baked Risotto With Greens and Peas image

This easy baked risotto eliminates the constant stirring required in traditional risotto recipes. It's laden with vegetables, namely kale and spinach, but other leafy greens like Swiss chard or collard greens would work equally well. If you happen to have some extra asparagus, sub it in for the peas. This risotto makes a great starter or side dish, but you can also turn it into a vegetarian main course by using vegetable or mushroom stock in place of the chicken broth, and topping it with sautéed mushrooms, a fried egg or crispy tofu slices. Leftovers can be refrigerated for two days and reheated with more broth, or repurposed into crunchy rice cakes or arancini. Simply form into patties or balls, coat in bread crumbs and shallow-fry until golden and crunchy.

2 tablespoons extra-virgin olive oil
1/2 cup finely chopped yellow onion
1 small garlic clove, minced
1 cup Arborio rice (about 7 ounces)
Kosher salt and black pepper
4 ounces green or lacinato kale (about ⅓ bunch), stems separated and thinly sliced, leaves stacked and cut into 1/4-inch-thick ribbons (about 4 packed cups)

1 cup frozen peas, thawed
3/4 cup grated Parmesan (3 ounces), plus more for garnish
