For the tea:
4 black currant tea bags
4 cups water
1/2 cup plus 1 tablespoon chilled simple syrup, or to taste
2 teaspoons raspberry vinegar
1 lime, cut into 4 wedges
For the syrup:
1 1/3 cups sugar
1 1/4 cups water

Steps:

  • To prepare the tea:
  • Put tea bags in a heatproof pitcher.
  • In a saucepan bring water just to a boil and pour over tea bags. Steep tea 5 minutes and remove tea bags. Cool tea and chill, covered, until cold, about 1 hour.
  • Stir in syrup and vinegar. Squeeze lime wedges into tea and add wedges. Serve tea over ice in tall glasses.
  • To prepare the syrup:
  • In a saucepan bring sugar and water to a boil, stirring, and boil until sugar is completely dissolved. Let syrup cool and chill, covered. Syrup may be made 2 weeks ahead and chilled, covered. Makes about 2 cups.

1/2 cup granulated sugar

Steps:

  • Steep tea in 8 cups (2 L) boiling water for 5 minutes. Discard bags.
  • Meanwhile, in large saucepan, bring currants or blueberries, sugar and 1 cup water to boil.
  • Reduce heat to medium-low; simmer, stirring, until fruit breaks down (about 5 minutes).
  • Add to tea; let cool to room temperature (about 30 minutes).
  • Refrigerate until cold (about 2 hours).
  • Strain through cheesecloth-lined sieve into pitcher, pressing solids only gently so beverage remains clear.

1 cup boiling water, boiling
1/2 cup wildflower orange blossom honey
1/4 cup fresh mint leaves, crushed, packed, fresh
1 1/4 cups pure blueberry juice, blueberry, pure
1/2 cup sweet pineapple juice, pineapple, sweet
1/8 cup fresh lime juice, lime, fresh, squeezed
ice cube
1 1/2 quarts club soda or 1 1/2 quarts ginger ale
6 mint sprigs, garnish
6 lime slices, thin

Steps:

  • To make the tea concentrate you will place the tea bags in a medium bowl into which you will add the boiling water and steep for 10 minutes, then reemove the tea bags.
  • To the tea add your honey and mint, making sure to mix well. Allow to cool to room temperature on the counter. Once cooled remove the mint leaves.
  • Add the fruit juices and tea concentrate into a large pitcher, mix and place in the fridge until needed.

4 cups fresh blueberries or 4 cups dry-packed frozen blueberries, rinsed and drained
2 cups water
1 cup sugar

Steps:

  • Place blueberries in a saucepan with water. Bring to a boil, reduce heat and simmer 10 minutes.
  • Set sieve or colander lined with cheesecloth (I use a thick papertowel) over a bowl and pour in the blueberry mixture.
  • Gently press out the juice with a spoon or by twisting the cheesecloth. Discard the pulp and measure the juice into saucepan.
  • Add 1/2 cup sugar for each cup of juice and cook over medium heat, stirring until sugar is dissolved.
  • Bring to a boil and cook 2 minutes.
  • Chill and pour into covered jar. Store in refrigerator.
  • Add two tablespoons to each glass of prepared iced tea. Stir well and garnish with a lemon slice.
