Time 17m

Number Of Ingredients 10

1 medium sweet Vidalia onion, diced small
1 pound lean ground beef (I used 85% lean)
olive oil, optional if necessary
one 1.25-ounce packet taco seasoning
two 8-ounce frozen pizza crusts (read blog post for crust discussion)
one 15-ounce can black seasoned refried beans, divided
1 1/2 cups shredded mozzarella cheese, divided
2 cups shredded Mexican cheddar cheese blend, divided
1 Roma tomato, diced small, divided
fresh cilantro, for garnishing

Steps:

  • Preheat oven to 425F and line one or two sheet pans with parchment paper or a Silpat; set aside.*
  • To a large skillet, add the onion, beef, olive oil if necessary, and cook over medium-high heat for about 5 to 6 minutes, or until beef is cooked through and onions are soft and translucent; crumble beef as it cooks and stir frequently to ensure even cooking.
  • Add the taco seasoning and stir to combine. Take skillet off the heat and set aside.
  • Place the frozen pizza crusts directly from the freezer on either one or two sheet pans, depending on the exact size of your crusts and pans.
  • Add an equal amount of the refried beans to both crusts, leaving a bare 1-inch margin from the edges.
  • Add an equal amount of the beef mixture to both crusts.
  • Add 3/4 cup mozzarella cheese to each crust.
  • Add 1 cup cheddar cheese to each crust.
  • Bake for about 12 minutes, or until cheese is melted and crusts are as cooked through as desired.
  • Add an equal amount of tomato and cilantro as desired to both crusts and serve immediately. Pizza is best fresh but will keep airtight in the fridge for up to 5 days.

Time 30m

Number Of Ingredients 9

2 tubes (8 oz each) refrigerated crescent rolls
1 package (8 oz) cream cheese, softened
1 cup (8 oz) sour cream
1 pound ground beef or ground turkey
1-2 envelopes or 2-4 Tbsp taco seasoning, to taste
1 medium tomato, chopped
2 cups shredded Mexican cheese
1 cup shredded lettuce
optional: avocado, taco sauce, hot sauce, black beans

Steps:

  • Preheat the oven to 375 degrees.
  • Unroll the crescent roll dough and lay out on a large ungreased cookie sheet. Pinch the perforations together to seal. Bake at 375 for 8-10 minutes or until light golden brown.
  • While the crescent rolls are baking, mix the softened cream cheese and sour cream together. Remove any lumps with a whisk. Set aside.
  • Brown the ground beef and drain. Add a can of drained black beans, optional, for more protein if desired. Add the taco seasoning and 1/4 cups of water. Simmer for 3-5 minutes, stirring occasionally.
  • When the crescent roll pizza crust is finished baking, remove from the oven and set aside to cool for 3-5 minutes. Spread the sour cream / cream cheese mixture over the crescent rolls. Sprinkle the ground beef mixture evenly over the top, followed by lettuce, tomatoes, cheese, and any other desired toppings.
  • Cut into serving-size pieces and serve immediately or store in the refrigerator for cold taco pizza to be served later.

TACO PIZZA

Categories     main-dish

Time 3h20m

Yield 8 servings

Number Of Ingredients 16

1 teaspoon active dry yeast
4 cups all-purpose flour
1/3 cup olive oil, plus more for oiling baking sheet
1 teaspoon kosher salt
One 14-ounce can black beans or 2 cups homemade black beans
1 teaspoon taco seasoning (prepared or make your own)
1/2 cup canola oil, for frying
4 corn tortillas, sliced into thin strips
1 cup grated sharp Cheddar
1 cup grated Monterey Jack
1 head green leaf lettuce, sliced or shredded thin
2 ripe tomatoes, diced
1/2 cup fresh cilantro leaves
1/4 cup sour cream
3 tablespoons hot sauce, or more to taste
Good-quality salsa, for serving

Steps:

  • Make the pizza dough: Mix the yeast with 1 1/2 cups warm water and set aside for 8 to 10 minutes. Mix together the flour, olive oil and salt in a bowl using an electric mixer. With the speed on low, drizzle in the yeast/water mixture and mix until totally combined. Cover the bowl with a towel and set in a warm, draft-free place. Allow to rise for 1 to 2 hours.
  • Pour the black beans into a saucepan. Add the taco seasoning and heat up the beans over medium-low heat. Use a potato masher to mash the beans to the desired texture. Continue cooking/heating over medium-low heat, stirring occasionally, until the beans are no longer runny (they should be the texture of refried beans). Set aside.
  • In a small skillet, heat the canola oil over medium heat. When hot enough to fry, drop in the tortilla strips in batches, frying them quickly and removing them from the oil with a fork when crisp--30 to 45 seconds per batch. Transfer to a paper towel-lined plate. Set aside.
  • Position an oven rack in the bottom position in the oven. Preheat the oven to 500 degrees F. Oil a baking sheet with some olive oil.
  • Remove half of the pizza dough from the bowl. (Place the remaining half in a large plastic bag and refrigerate, saving it for another use.) With your hands, spread the dough out on the oiled baking sheet, making sure it's relatively thin. Spread a layer of refried beans all over the pizza crust. Sprinkle the grated Cheddar and Monterey Jack over the top. Place the baking sheet on the bottom rack in the oven and bake for about 25 minutes, watching to make sure the crust doesn't burn. Remove the pizza from the oven and sprinkle on the shredded lettuce, diced tomatoes and cilantro leaves.
  • Mix together the sour cream and hot sauce in a small bowl, adding enough hot sauce to make the mixture pourable. With a spoon (or you can put it in a pastry bag), drizzle the mixture over the finished pizza.
  • Sprinkle with the tortilla strips. Cut into squares and serve immediately with good-quality salsa.

Tips:

  • Choose the right tortillas: Corn tortillas are traditional for tacos, but flour tortillas can also be used. Look for tortillas that are fresh and pliable.
  • Cook the tortillas: Tortillas can be cooked in a variety of ways. You can grill them, fry them, or bake them. Grilling or frying them will give them a crispy texture, while baking them will give them a softer texture.
  • Prepare the black bean mixture: The black bean mixture is the heart of this pizza. Be sure to rinse and drain the black beans before using them. You can mash them or leave them whole, depending on your preference.
  • Add your favorite toppings: Once you have the black bean mixture and the tortillas, you can add your favorite toppings. Some popular options include cheese, salsa, sour cream, and guacamole.
  • Bake the pizza: Once you have assembled the pizza, bake it in a preheated oven until the cheese is melted and bubbly. This will usually take about 10-15 minutes.

Conclusion:

Black bean taco pizza is a delicious and easy-to-make meal that is perfect for any occasion. It is a great way to use up leftover black beans, and it can be customized to your liking. Whether you like your pizza with lots of toppings or just a few, this recipe is sure to please. So next time you are looking for a quick and easy meal, give black bean taco pizza a try.
