BIG GAME SUGAR STEAK

Big Game Sugar Steak image

This steak is a real showstopper! So easy and, despite the copious sugar rub, quite savory and juicy! My family's favorite way to grill steak. This steak comes out perfectly mid-rare every time. Always a winner. Very impressive way to cook steak. The sugar forms a crust sealing in the juices. There is no sugar taste!

Yield 10

Number Of Ingredients 2

1 (5 pound) 3-inch thick beef top sirloin steak
2 cups white sugar

Steps:

  • Place steak in a large bowl. Knead sugar into meat to form a thick crust. Cover the bowl with plastic wrap and let sit at room temperature; 3 to 4 hours.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Cook steak on preheated grill until each side is caramelized, about 10 minutes per side.
  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil; place steak on prepared baking sheet.
  • Roast in the preheated oven until steak is starting to firm and is reddish-pink and juicy in the center, about 20 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Remove from oven and let rest for 15 minutes before slicing.

"THE BIG GAME IS AT STEAK" SANDWICH

Provided by Food Network

Categories     main-dish

Time 1h10m

Yield 6 servings

Number Of Ingredients 17

4 ounces Kona coffee beans
4 ounces dried porcini mushrooms
3 pounds elk tenderloin
4 heirloom tomatoes, sliced
1 teaspoon canola oil
1/4 cup chopped onion
1 cup chopped cherries
1/4 cup cherry wine
1/4 cup stock, chicken or beef
1/4 cup grated nutmeg
1/4 cup allspice
1 tablespoon brown sugar
6 slices pancetta
2 ounces garlic butter
6 onion rolls, halved
6 ounces goat cheese
3 ounces arugula

Steps:

  • Preheat a grill and smoker to medium.
  • Grind the coffee and dried mushrooms in a spice grinder, then rub it into the elk tenderloin. Grill the tenderloin over medium heat until medium-rare, and an instant-read thermometer registers 130 to 140 degrees F in the center, about 10 minutes. Set aside in a warming oven.
  • While the tenderloin is cooking, put the tomatoes on a sizzler or metal plate in a smoker for 10 minutes. Set aside.
  • Chutney: Put a saucepan over medium-low heat, and add the canola oil, onions, cherries, wine, stock, nutmeg, allspice and sugar. Cook for 30 minutes.
  • Grill the pancetta for about 5 minutes per side, brushing with garlic butter.
  • To assemble: Put an onion roll on each serving plate. Spread enough goat cheese on both halves to cover slightly. Slice the elk and put some on each roll bottom. Top each with a slice of pancetta, some arugula and heirloom tomato slices. Top with a dollop of chutney and cover with the top halves of the roll.

Tips:

  • Use a high-quality steak for the best flavor. Look for a steak with good marbling, which will help keep it juicy and tender.
  • Season the steak generously with salt and pepper before cooking. This will help to enhance the natural flavor of the meat.
  • Cook the steak over high heat to quickly sear the outside and create a flavorful crust. Then, reduce the heat and cook the steak to your desired doneness.
  • Let the steak rest for a few minutes before slicing and serving. This will help the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak.
  • Serve the steak with your favorite sides, such as mashed potatoes, roasted vegetables, or a salad.

Conclusion:

The Big Game Sugar Steak is a delicious and impressive dish that is perfect for any special occasion. By following these tips, you can make a steak that is sure to impress your friends and family. So what are you waiting for? Fire up the grill and get cooking!
