BETTY'S RICH BEEF ITALIAN CASSEROLE
Chunky pieces of beef cooked in a rich Italian styled tomato sauce. Serve with creamy polenta or mash with crusty bread and steamed veggies. Perfect on a chilly night. I have baked this and used the slow cooker/croc pot. If using the croc pot use only ONE tin of tomatoes.

BETTY MAYFIELD'S BEEF CASSEROLE
My sister and I used to request this recipe often. Mom never seemed to make it often enough... we loved it! I'm not sure where my Mom got the recipe, but I think Betty Mayfield was a past Miss America? Not sure!

RICH BAKED SPAGHETTI
It takes a little longer to make baked spaghetti, but the difference in taste, texture and richness is well worth the time. I serve this lasagna-style dish with a tossed green salad and breadsticks for a hearty, healthy meal. -Betty Rabe, Mahtomedi, Minnesota

AUNT BETTY'S CREAMY TO DIE FOR BEEF CASSEROLE
My aunt Betty makes this amazing casserole. Though hard boiled eggs and chipped beef are hardly haute cuisine, I think you'll agree after trying this one that the flavor is outstanding. You have to mix this up and refrigerate it overnight before baking it to fully enhance the flavors. Do not add any salt--the beef and the soup are salty enough. You may want to rinse the beef before adding it to the casserole as it is quite salty. Add a green salad and "presto" dinner is ready. Prep time is minimal but you need to mix this up the day before you want to bake it.

Tips:
- Use high-quality ingredients for the best flavor. Look for fresh, lean ground beef, ripe vegetables, and flavorful cheeses.
- Brown the beef well before adding it to the casserole. This will help to develop its flavor and prevent it from becoming dry.
- Don't overcook the casserole. The beef should be cooked through, but still slightly pink in the center. Overcooking will make the beef tough and dry.
- Serve the casserole with a side of crusty bread or pasta to soak up all the delicious sauce.
Conclusion:
Betty's Rich Beef Italian Casserole is a hearty and flavorful dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste preferences. With its simple ingredients and delicious flavor, this casserole is sure to become a family favorite.
