BANANA BREAD FROM BETTY CROCKER

Banana Bread from Betty Crocker image

This is the recipe I always use for banana bread. It is very forgiving and you can add more nuts, more bananas (just adjust the milk quantity so the batter has the consistency of muffin batter), and only need one bowl. I use walnuts usually, but pecans are good too and I usually use the cheap 'whole and pieces' nuts without chopping further.

Time 1h10m

Yield 1 loaf of bread, 4-6 serving(s)

Number Of Ingredients 10

1 cup sugar
1/3 cup butter, softened (about 5 and 1/3 tbsp)
2 eggs
1 1/2 cups of ripe bananas (about 3-4 ripe bananas)
1/3 cup water
1 2/3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup of chopped nuts (optional)

  • Heat oven to 350 degrees. Grease bottom of a 9x5x3 inch loaf pan. Mix sugar and butter in a medium bowl. Stir in eggs until blended. Add bananas and water; beat 30 seconds. Stir in remaining ingredients except nuts just until moistened. Stir in nuts. Pour into pan. Bake until wooden pick inserted in center comes out clean, about 55 to 60 minutes; cool 5 minutes. Cool completely before slicing or it might fall apart and be difficult to slice into pieces.
  • 120 calories per slice.
  • DO NOT USE SELF RISING FLOUR (the baking soda and powder lets it rise on its own.
  • wrap and refrigerate not longer than 1 week.

Tips:

  • Choosing the Right Bananas: Opt for overripe bananas with dark brown peels. They offer intense sweetness and a moist texture to your bread.
  • Mashed Bananas: Use a fork or potato masher to achieve a smooth, lump-free consistency. Avoid using a food processor or blender, as they can over-process the bananas, resulting in a denser bread.
  • Measuring Flour: Employ the spoon and level technique for accurate flour measurement. Scoop the flour into a measuring cup using a spoon, then level it off with a knife or straight edge.
  • Mixing the Batter: Begin by mixing the dry ingredients in a separate bowl. In another bowl, combine the wet ingredients. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Overmixing can result in a tough bread.
  • Nuts and Add-Ins: Feel free to incorporate your favorite add-ins, such as chopped walnuts, pecans, raisins, or chocolate chips. Stir them in gently at the end of mixing to avoid overmixing.
  • Baking Temperature: Preheat your oven to the specified temperature before placing the bread in. Maintaining the correct temperature ensures even baking and a properly risen loaf.
  • Checking for Doneness: Insert a toothpick or skewer into the center of the bread. If it comes out clean or with just a few moist crumbs attached, your bread is ready.
  • Cooling Before Slicing: Allow the bread to cool completely before slicing. This prevents the bread from crumbling and helps it retain its shape.
