This is pretty close to what my mom used to make. I've always thought of it as healthy and filling. There is no meat and very little fat in this recipe. I created this recipe on a cold and rainy winter day on which it definitely hit the spot.

Tips:

  • Use a variety of vegetables. This will give your soup more flavor and nutrients. Some good vegetables to use include carrots, celery, onions, potatoes, green beans, and peas.
  • Don't be afraid to use frozen vegetables. Frozen vegetables are just as nutritious as fresh vegetables, and they're often more convenient. They're also a great way to save money.
  • Add some herbs and spices. Herbs and spices can help to enhance the flavor of your soup. Some good herbs and spices to use include thyme, rosemary, oregano, basil, garlic, and pepper.
  • Don't overcook the vegetables. Overcooked vegetables will lose their flavor and nutrients. Cook them just until they're tender.
  • Serve your soup with a dollop of yogurt or sour cream. This will help to add some richness and creaminess to the soup.

Conclusion:

Vegetable soup is a delicious, healthy, and affordable meal that's perfect for any occasion. It's also a great way to use up leftover vegetables. With so many different recipes to choose from, you're sure to find one that you'll love.
