1 c sugar
2/3 c milk
1/3 c canola oil
1 egg
1 tsp vanilla extract
1 1/2 c all purpose flour
2 tsp baking powder
1/2 tsp salt
BUTTERCREAM ICING
1/4 c butter (softened)
1/4 c shortening
3 c confectioners' sugar
1/2 tsp vanilla extract
1 - 2 Tbsp milk (1 to 2 depending on consistency that the icing is taking)

Steps:

  • 1. Cake Directions:
  • 2. In a large bowl, beat the sugar, milk, oil, egg, and vanilla until well blended.
  • 3. Combine the flour, baking powder, and salt.
  • 4. Gradually add to sugar mixture until blended.
  • 5. Pour into a greased 9 -in square baking pan. Bake at 350 degrees for 30 - 35 minutes or until a toothpick inserted near the center comes out clean.
  • 6. Cool on a wire rack. Serve with fruit or ice cream if desired. Can make about 8 - 9 servings.
  • 7. Icing Directions:
  • 8. In a large bowl, cream butter until light and fluffy. Beat in the confectioners' sugar, vanilla and enough milk to achieve desired consistency.

Tips:

  • Use room temperature ingredients. This will help the cake batter come together smoothly and evenly.
  • Measure your ingredients accurately. This is especially important for the flour, as too much or too little can affect the cake's texture.
  • Cream the butter and sugar together until light and fluffy. This will help incorporate air into the batter, resulting in a lighter, more tender cake.
  • Add the eggs one at a time, beating well after each addition. This will help prevent the batter from curdling.
  • Gradually add the dry ingredients to the wet ingredients, alternating with milk. This will help prevent the batter from becoming too thick or lumpy.
  • Do not overmix the batter. Overmixing can develop the gluten in the flour, resulting in a tough, dense cake.
  • Bake the cake in a preheated oven. This will help ensure that the cake bakes evenly.
  • Let the cake cool completely before frosting. This will help prevent the frosting from melting or becoming too soft.

Conclusion:

This vanilla cake recipe is a classic for a reason. It is simple to make, yet always delicious. With its moist, tender crumb and sweet, vanilla flavor, this cake is sure to please everyone at your table. Whether you are making it for a special occasion or just a weeknight treat, this vanilla cake is sure to be a hit.
