Adding a little orange juice to make the dressing a little sweeter. This recipe easily makes enough for 10 people or more. If it's on the thin side, add another 1/2 cup of mayonnaise. If it's too thick, thin with more orange juice.

Time 2h30m

Yield 6 to 8 servings

Number Of Ingredients 10

2 pounds green cabbage
4 carrots
1 medium yellow onion
1/2 cup mayonnaise
1/4 cup mustard
2 teaspoons apple cider vinegar
1 cup sugar
1 teaspoon black pepper
1/2 teaspoon cayenne
Salt and freshly ground black pepper

Steps:

  • Cut cabbage in quarters and remove core. Peel carrots and onion and cut into pieces that would fit through the feed tube of a food processor. Fit food processor with the large-holed grater attachment and push cabbage, carrots, and onions through feed tube to grate. In a large bowl, toss vegetables together.
  • In another medium bowl, prepare the coleslaw dressing by whisking together the mayonnaise, mustard, cider vinegar, sugar, black pepper, and cayenne. Toss dressing with the cabbage mixture, and season with salt and pepper, to taste. Cover with plastic wrap and chill for at least 2 hours before serving.

THE BEST VINEGAR COLESLAW

The Best Vinegar Coleslaw image

We love the zippiness that a vinegar-based dressing brings to this coleslaw, making it the perfect partner for rich, meaty dishes like pulled pork or ribs. Cabbage can take lots of seasoning and lots of vinegar, so don't be bashful. But the real secret to this colorful coleslaw is the marinating time - a long trip to the fridge softens up the veggies and gives them time to absorb the flavors of the vinaigrette. A drizzle of olive oil at the end balances the acidity.

SWEET, CREAMY COLESLAW

Sweet, Creamy Coleslaw image

I never liked coleslaw until I tried my husband's great aunt's. Now I can't get enough of it! Great with BBQ pork sandwiches. You can also use a bag of slaw mix instead of shredding the cabbage and carrots yourself.

Categories     Vegetable

Time 15m

Yield 6-8 serving(s)

Number Of Ingredients 5

1 head green cabbage
2 -4 carrots
1 cup mayonnaise
2 tablespoons vinegar
2 tablespoons sugar

Steps:

  • Shred cabbage and carrots into a bowl.
  • Mix mayonnaise, vinegar and sugar in a separate bowl; blending well.
  • Pour over shredded vegetables and stir to coat.
  • Chill.
  • Amounts of dressing ingredients can be adjusted to suit taste but always use the same amount of vinegar as sugar.

Tips:

  • Choose the right cabbage. Green cabbage is the traditional choice for coleslaw, but you can also use red cabbage or a mix of both. Red cabbage will give your coleslaw a beautiful purple hue.
  • Shred the cabbage finely. This will help the cabbage absorb the dressing better.
  • Use a sharp knife or a mandoline to shred the cabbage. This will give you clean, even shreds.
  • Add other vegetables to your coleslaw. Some popular additions include carrots, celery, onions, and peppers.
  • Make the dressing ahead of time. This will allow the flavors to meld.
  • Taste the dressing before adding it to the coleslaw. Adjust the seasonings to your liking.
  • Toss the coleslaw gently. Over-mixing will break down the cabbage and make the coleslaw mushy.
  • Chill the coleslaw before serving. This will help the flavors to develop.
  • Serve the coleslaw as a side dish or as a topping for sandwiches, tacos, or burgers.

Conclusion:

With its sweet and tangy flavor, coleslaw is a refreshing and versatile side dish that can be enjoyed all year round. There are many different ways to make coleslaw, so you can easily find a recipe that suits your taste. Whether you like it classic or with a twist, coleslaw is sure to be a hit at your next potluck or barbecue.
