1 cup cooked rice
2 eggs
2 cups whole milk
1/8 teaspoon salt
4 tablespoons sugar
1 pinch nutmeg (optional)
1 dash vanilla essence (optional)
3/4 cup raisins (optional)

Steps:

  • Beat eggs and salt a little, add sugar then milk with splash of vanilla essence (optional). Put rice or sago in a buttered dish, pour over the egg mixture and sprinkle with a pinch of nutmeg (optional). Set in a dish of water and bake slowly in the oven at 160 c (325F) until custard sets.
  • Extra Info: The milk in New Zealand is not watered down, still has cream in it, making it a creamy rice pudding. If not in NZ or Australia, then you can use Half and Half. I also add sultanas (raisins) to this recipe on occasion, which I cook to plump, with the rice beforehand. Sometimes I dot the top of the rice pudding with knobs of butter in order to get a brown skin.

1 cup jasmine rice (uncooked)
2 cups water
1 tablespoon olive oil
2 cups water
1 knorr caldo de tomate bouillon cube (or similar Tomato Bouillon with Chicken Flavor cube)

Steps:

  • In a microwave-safe dish (I use a 2-cup Pyrex measuring cup), add 2 cups water and 1 Knorr Caldo de Tomate bouillon cube. Microwave for 2 minutes to heat water. Use a wooden spoon to carefully crush and mix the cube of bouillon in the water. It does not have to be perfectly mixed in, but you do want to get it dissolved.
  • In a 4-quart or larger saucepan on medium-high heat, add 1 tablespoon olive oil.
  • Add uncooked jasmine rice and to the pan, and stir constantly until rice is browned slightly. This should take about 1 minute.
  • Add the water carefully, and bring to a boil.
  • Cover saucepan, reduce heat to low, and cook for 20 minutes.
  • At the end of cooking, fluff rice with a wooden spoon. If the rice looks too damp, leave uncovered and allow to cook for a few more minutes while stirring to prevent burning.

This recipe comes from Cooking Light, September 2005 and is without a doubt the best fried rice I have ever tasted. Not only great tasting but very easy to make as well. I have modified the original recipe slightly to reflect our preferences for oil, meat, veggies etc. The original recipe calls for shredded lettuce as an ingredient however I have never tried it this way. I will list it as an optional ingredient. The sesame oil is the secret ingredient as far as I am concerned!! Don't be shy, give it a try!!

2 large eggs, lightly beaten
3/4 cup yellow onion, minced

1 tablespoon salt

3 qt milk
1 pt heavy cream
1 1/3 c short grain rice(preferred, but you can use any grain on hand)
1/2 stick butter
1 c sugar
3/4 c raisins
3 large eggs
cinnamon

Steps:

  • 1. Place 2 3/4 quart of the milk and the heavy cream in a large pot and bring to a slow boil, stir constantly.
  • 2. When you see small bubbles add the rice, butter, sugar and raisins. Simmer, stirring the mixture often for 1 hour until the rice is tender and puffed.
  • 3. In a blender(or by hand) beat the eggs and add remaining 1/4 quart milk to eggs. Gradually add this mixture to the cooked rice and stir constantly over low heat until thick.

1 cup instant long grain white rice
2 -4 tablespoons prepared mustard
10 slices jalapeno peppers
1/2 tomatoes, sliced & diced
2 -4 tablespoons A.1. Original Sauce (or its generic version that is cheaper and sold at Food City preferrably)
1 tablespoon kraft fat free ranch dressing

Steps:

  • Bring 1 cup water to a boil and add 1 cup rice.
  • Let stand for 10-12 minutes. (*with this step, I usually put the rice on a plate and put it in the microwave for about 45 seconds to get it good and hot so the rice doesn't get cold half way through dinner*).
  • Remove from microwave.
  • Mix mustard into half of the rice on the plate till rice is saturated/completely covered.
  • Add about 10 slices of jalapenos to the mustard rice. Slices are as big as nickels; and cut the slices in halfs and fourths if you prefer it this way; those things are hot!
  • Can also add sliced & diced tomatoes, or just use tomatoes, or just use the jalapenos.
  • Now, add enough A1 sauce to saturate the remaining rice.
  • Add pepper to all of rice (optional).
  • You should have one half of the plate being the mustard half, while the other half is the A1 half.
  • On a little corner of the plate add about a tablespoon or two of the fat free Kraft ranch; When taking a bite of either the Mustard and jalapeno side, or the A1 side, a tiny little dip into this ranch makes this meal perfection!

1/2 cup white rice, such as Carolina long grain, basmati, jasmine or arborio
7 Tablespoons granulated sugar
1 vanilla bean
1 three inch cinnamon stick
2 large egg yolks

Steps:

  • In a 4-quart saucepan, combine 4 cups of the milk with the rice and sugar. With a pairing knife, split the vanilla bean lengthwise, scrape out the seeds, and add them to the pan. Add the scraped vanilla bean and the cinnamon stick and bring the mixture to a boil over medium heat. Reduce the heat as necessary to maintain a simmer and cook, stirring frequently but gently, until the rice is completely tender, about 25 minutes. Remove the pan from the heat. In a medium bowl, whisk the egg yolks until smooth. Whisk in about 1 cup of the hot rice mixture. Pour the egg mixture back into the pan, add the remaining 2/3 cup milk, and stir with a wooden spoon until thoroughly blended.
