- Using a stand mixer or an electric hand whisk, beat together the butter and sugar until light and fluffy, then beat in the egg, vanilla, buttermilk, oil and vinegar until combined. Gradually mix the wet ingredients into the dried. Once combined, mix in the red food colouring until you have a deep red mix - the colour may vary depending on what brand you use.

- While the cakes are cooling, make the icing. Beat together the butter and icing sugar using an electric whisk or by hand until pale and fluffy, about 3 mins, then beat in the cream cheese for a further 1-2 mins until well combined.
- Once the cakes are cool, use a piping bag fitted with a star nozzle to cover the cakes with the cream cheese icing, or dollop the icing on top using a spoon.

Tips:
- To achieve a vibrant red color, use high-quality red food coloring. Avoid using natural alternatives like beetroot juice, as they can result in a dull or faded color.
- For a moist and tender crumb, do not overmix the batter. Overmixing can result in a dense and dry texture.
- Always preheat your oven before baking. This helps ensure even cooking and prevents the cupcakes from sinking in the center.
- Fill the cupcake liners only 2/3 full to allow room for the cupcakes to rise. Overfilling the liners can result in messy and overflowing cupcakes.
- Bake the cupcakes until a toothpick inserted into the center comes out clean. Overbaking can result in dry and crumbly cupcakes.
- Let the cupcakes cool completely before frosting them. This helps prevent the frosting from melting and becoming runny.
- For a smooth and creamy frosting, use softened butter and cream cheese. Avoid using cold or hard butter, as this can result in a lumpy frosting.
- Use a piping bag or a ziplock bag with the corner snipped off to decorate the cupcakes. This helps achieve a neat and professional look.
Conclusion:
Red velvet cupcakes are a classic dessert that can be enjoyed for any occasion. By following these tips and using high-quality ingredients, you can create moist, tender, and flavorful red velvet cupcakes that are sure to impress your friends and family.
