Time 35m

Yield 12-14 biscuits

Number Of Ingredients 12

Cooking spray
1 3/4 cups all-purpose flour
1 tablespoon plus 2 teaspoons baking powder
2 1/2 teaspoons sugar
1/4 teaspoon salt
3 tablespoons vegetable shortening, at room temperature
4 tablespoons cold unsalted butter, cut into 1/2-inch pieces
6 ounces grated yellow cheddar cheese (about 1 1/4 cups)
3/4 cup whole milk
3 tablespoons unsalted butter
1 clove garlic, smashed
1 teaspoon chopped fresh parsley

Steps:

  • Position a rack in the upper third of the oven and preheat to 425 degrees. Lightly mist a large baking sheet with cooking spray.
  • Make the biscuits: Pulse the flour, baking powder, sugar and salt in a food processor. Add the shortening and pulse until combined. Add the butter; pulse 4 or 5 times, or until the butter is in pea-size pieces. Add the cheese and pulse 2 or 3 times. Pour in the milk and pulse just until the mixture is moistened and forms a shaggy dough. Turn out onto a clean surface and gently knead until the dough comes together. Do not overwork the dough or the biscuits will be tough.
  • Drop the dough onto the baking sheet in scant 1/4-cup portions, 2 inches apart, and bake until golden, 15 to 20 minutes.
  • Meanwhile, make the garlic butter: Melt the butter with the garlic in a small saucepan over medium heat; cook for 1 minute. Remove from the heat and stir in the parsley. Brush the biscuits with the garlic butter and serve warm.

Time 22m

Yield 18-20 biscuits

Number Of Ingredients 6

2 1/4 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon salt
2 cups cheddar cheese, grated (optional)
1/2 cup shortening, cut up
1 cup milk

Steps:

  • Preheat oven to 450.
  • Sift and measure flour.
  • Add baking power and salt.
  • Stir in grated cheese (optional).
  • Cut up shortening and add.
  • Pour in milk.
  • Mix until sticky.
  • Put on lightly floured surface and kneed 8-10 times.
  • Roll out or pat until half an inch thick.
  • Cut with floured glass.
  • Bake on ungreased baking sheet for 12-15 minutes or light golden brown.

Tips:

  • Use cold butter: Cold butter will help create flaky biscuits. If your butter is too soft, it will make the biscuits tough.
  • Grate the cheese: Grating the cheese will help it distribute evenly throughout the biscuits. You can use a variety of cheeses, such as cheddar, Parmesan, or Colby Jack.
  • Don't overwork the dough: Overworking the dough will make the biscuits tough. Mix the ingredients just until they are combined.
  • Chill the dough: Chilling the dough will help the biscuits rise and create a more flaky texture. Chill the dough for at least 30 minutes before baking.
  • Bake the biscuits until they are golden brown: The biscuits are done baking when they are golden brown on top and a toothpick inserted into the center comes out clean.

Conclusion:

These cheese biscuits are a delicious and easy-to-make side dish. They are perfect for any occasion, from a casual weeknight dinner to a special holiday meal. With just a few simple ingredients, you can create a batch of flaky, cheesy biscuits that everyone will love. So next time you're looking for a quick and easy side dish, give these cheese biscuits a try. You won't be disappointed!
