This baked homemade applesauce is rich, tart and sweet -- almost like apple pie filling -- and a world apart from store-bought.

Categories     Breakfast & Brunch

Time 1h

Yield About 4 cups

Number Of Ingredients 4

4 pounds apples (about 10), peeled, cored and cut into 1-inch chunks (I like a combination of McIntosh and Golden Delicious)
3 tablespoons unsalted butter, cut into ¼-inch chunks
¼ cup plus 2 tablespoons light or dark brown sugar, packed
Ground cinnamon, for serving (optional)

Steps:

  • Preheat the oven to 400°F.
  • Place the apples in a 9x13-inch baking dish. Scatter the brown sugar and chunks of butter evenly over top. Cover tightly with aluminum foil and bake for 45 to 50 minutes, tossing once halfway through, until the apples are very tender.
  • Mash the apples with a potato masher or fork. Taste; if the applesauce is too tart, add more brown sugar little by little until the flavors are balanced. (Note that no two batches will ever be the same; the flavor will depend on the tartness of the apples you use.)
  • Make-Ahead/Freezer-Friendly Instructions: The applesauce can be made up to 3 days ahead and refrigerated or frozen in an airtight container for up to 3 months.

Time 1h35m

Yield about 5 cups

Number Of Ingredients 5

4 pounds assorted apples, such as Golden Delicious, Gala, Honeycrisp or McIntosh (about 8), peeled, cored and chopped
1/4 cup sugar
Kosher salt
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon ground cinnamon

Steps:

  • Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
  • Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
  • Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

Time 1h50m

Yield 2 1/2 quarts

Number Of Ingredients 8

2 large navel oranges, zested and juiced
1 lemon, zested and juiced
3 pounds Granny Smith apples (about 6 to 8 apples)
3 pounds sweet red apples, such as Macoun, McIntosh, or Winesap (about 6 to 8 apples)
1/2 cup light brown sugar, packed
4 tablespoons unsalted butter
2 teaspoons ground cinnamon
1/2 teaspoon ground allspice

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the zest and juice of the oranges and lemon in a large bowl. Peel, quarter, and core the apples (reserving the peel of 2 of the red apples) and toss them in the juice. Pour the apples, reserved apple peel, and juice into a nonreactive Dutch oven or enameled iron pot. Add the brown sugar, butter, cinnamon, and allspice and cover the pot. Bake for 1 1/2 hours, or until all the apples are soft. Remove and discard the red apple peel. Mix with a whisk until smooth, and serve warm or at room temperature.

Tips:

  • Choose the right apples: For chunky applesauce, it's best to use a firm apple that holds its shape well when cooked, such as Granny Smith, Honeycrisp, or Braeburn.
  • Peel and core the apples: This will help to remove the skin and seeds from the apples, which can make the applesauce grainy.
  • Cut the apples into small chunks: This will help the applesauce to cook evenly.
  • Add some sugar or honey: This will help to sweeten the applesauce, but you can adjust the amount to your taste.
  • Add some spices: Cinnamon, nutmeg, and ginger are all popular spices to add to applesauce. You can also add a pinch of salt to help balance the sweetness of the apples.
  • Cook the applesauce over low heat: This will help to prevent the applesauce from burning and will allow the flavors to develop.
  • Stir the applesauce frequently: This will help to prevent the apples from sticking to the bottom of the pot.
  • Taste the applesauce and adjust the seasonings as needed: You may want to add more sugar, spices, or salt to taste.

Conclusion:

Chunky applesauce is a delicious and versatile condiment that can be used in a variety of dishes. It's also a great way to use up leftover apples. With a few simple ingredients and a little bit of time, you can make a delicious batch of chunky applesauce at home.
