BERGY DIM SUM #6 STEAMED SWEET BEAN BUNS
This recipe is from the "Complete Asian Cookbook" I have not tried this recipe as stated but have posted it by request ( I am not even sure if I can buy sweetened canned bean paste here). However the dough is what I use for other steamed Buns and will refer back to this recipe when I post other fillings

Steps:
- --------Instructionsfor dough----------.
- Sift flour and baking powder into a bowl add sugar and mix, rub in the lard with your fingertips until evenly distributed.
- Add water and vinegar together and knead until a fairly soft dough.
- Shape into a ball and let it rest, covered, for 30 minutes.
- ----------Tomake the buns-----------.
- Divide the dough into10 portions.
- Mould each into a smooth ball.
- Roll each out on a lightly floured surface to a circle about 4 inches across.
- Put a heaping teasp of filling in the centre and gather the edges inward, folding and pleating to make a neat join.
- Twist dough to seal.
- Put each bun, join downwards, on a piece of bakers paper, lightly greased with sesame seed oil,in a steamer.
- Cover and steam for 20 min utes.
- Serve warm.
- (The cooked buns can be refrigerated overnight and reheated by steaming 3 minutes before serving).
- -------------Filling------------:The filling for this recipe is simply a teaspoon full of the prepared sweet bean paste.

This can also be part of a Dim Sum Brunch.For a Dim Sum Brunch you would usually serve about 8-10 dishes different dishes, depending on the appetites of your guests. This recipe can be frozen and when you wish to serve it take it frozen and steam them over very high heat. I prefer to freeze them unsteamed. These are tasty!

Steps:
- Sift flour and salt into a bowl of mixer fitted with the dough paddle and quickly add the boiling water.
- Mix until springy.
- When cool enough to touch, knead a few times on an oiled surface.
- If you do not have a mixer, after you have added the water to the flour/salt work the dough with the handle of a wooden spoon until it is cool enough to knead by hand.
- Then knead on an oiled surface until springy.
- Cover with a damp cloth and set aside.
- Mix shrimp, water chestnuts, soy sauce,sugar and cornstarch with your fingers until sticky.
- Refrigerate for 30 minutes.
- Roll the dough out into a long sausage and cut off pieces (approx 14" long and into 16 pieces).
- Roll out each piece into a thin round.
- Place a teaspoon of the filling on each round and pinch the edges together (press with a fork to decorate the edges).
- Oil your steamer and place the dumplings in it and steam over high heat for 8-9 minutes.
- Serve with a spicy chili sauce or soy mixed with hot mustard.

- In a small bowl, mix the sugar and salt in the water, and then mix in the yeast. Let it rest for about 15 mins, or till the surface is covered in frothy yeast.
- Add the oil to the mixture and stir it in to combine.
- In a large bowl, add the flour and make a hole in the center. Add the liquid to the hole and gradually incorporate the flour till you have a sticky mass.
- Oil your bench top with a little olive or vegetable oil, them knead the dough on the oiled surface until it forms into an elastic and smooth ball, which takes about 15 minutes. The dough should be elastic and slightly tacky but not so that it sticks to your hands.
- Roll out the dough into a tube that's about 5cm in diameter.
- Slice the tube into 16 loafs. Lay each of the loafs on its cylindrical edge, not the face, on top of a square of parchment paper, and leave for about 20-30mins to rise (or till the surface has become slightly puffy).
- Shape your buns - if at this time you wish to make filled buns, roll them into a circle, add the filling to the middle then pinch the sides together and give it a slight twist so it doesn't come undone as it steams. Leave to rest for another 30 minutes.
- Arrange the loafs in a steamer. They will expand quite a fair bit so try and leave about 3-5cm around each bun. Cover the steamer and steam over high heat for 15 minutes.
- Immediately remove from the steamer and place on a plate to cool enough so they can be handled.
Tips:
- For a softer bun, use bread flour instead of all-purpose flour.
- Make sure the yeast is fresh and active. If you're not sure, test it by mixing it with some warm water and sugar. If it doesn't start to bubble after a few minutes, it's not active and you should replace it.
- Don't over-knead the dough. Kneading it too much will make the buns tough.
- Let the dough rise in a warm place until it's doubled in size. This will take about an hour.
- To make the sweet bean paste, use a food processor to blend the beans until they're smooth. If you don't have a food processor, you can mash the beans with a fork.
- When shaping the buns, make sure to pinch the edges together tightly to prevent them from coming apart while they're steaming.
- Steam the buns for 10-12 minutes, or until they're cooked through. You can check if they're done by inserting a skewer into the center of a bun. If it comes out clean, the bun is cooked.
