PEACH SANGRIA

Peach Sangria image

I love this homemade sangria that my Grandfather taught me to make when I was young wife. He told me he had learn to make when he was working down in Mexico in his younger days. It is easy but it does takes time to cure between steps. We have had mango sangria, peach-mango sangria, or pear-pineapple sangria. You can garnish with blueberries, mint leaves, or fresh peach slices if you would like.

Time 10m

Yield 8 servings

Number Of Ingredients 4

6 peaches, (about 1 pound, 8 ounces), halved and pitted
1/4 cup superfine sugar, plus more for garnish
1/4 cup water
1 bottle Prosecco (750 ml or 3 1/3 cups), chilled

Steps:

  • With a box grater, grate peaches into a pitcher. Add the sugar and water to the peaches and place pitcher in refrigerator until chilled and sugar has dissolved, or until needed.
  • When ready to serve, pour the superfine sugar on a plate and invert a chilled Champagne glass in the sugar to coat rim. Pour about a 1/8th of the peach mixture into the prepared glass and top off with Prosecco. Stir gently and serve.

Tips:

  • Choose ripe, firm peaches that are free of blemishes.
  • To easily peel the peaches, score an "X" into the bottom of each peach and blanch them in boiling water for 30 seconds, then immediately transfer them to an ice bath.
  • To make the filling, use a combination of fresh and frozen peaches for the best flavor and texture.
  • If you don't have any cornstarch, you can use flour instead. However, cornstarch will give the filling a glossier, thicker consistency.
  • Be sure to let the filling cool completely before assembling the cobbler. This will help prevent the crust from becoming soggy.
  • For a crispy crust, brush the top of the cobbler with melted butter before baking.
  • Serve the cobbler warm with a scoop of vanilla ice cream or whipped cream.
