3/4 cup beer, lager or pale ale

3/4 cup white cornmeal
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
4 cups peanut oil
Sea salt
Garlic Aioli, recipe follows

Tips:

  • Choose the right mushrooms. Button, shiitake, and oyster mushrooms all work well in this recipe.
  • Make sure the mushrooms are clean and dry before battering them.
  • Don't overcrowd the pan when frying the mushrooms. This will cause them to steam instead of fry.
  • Serve the mushrooms hot with your favorite dipping sauce.
  • Be careful not to overcook the mushrooms, or they will become tough.
  • If you don't have beer, you can use sparkling water or club soda instead.
