5-1/4 cups uncooked elbow macaroni
2-1/2 pounds ground beef
2 large onions, chopped
3 large carrots, shredded
3 celery ribs, chopped
2 cans (28 ounces each) Italian diced tomatoes, undrained
4 teaspoons salt
1 teaspoon garlic powder
1 teaspoon pepper
1/2 teaspoon dried oregano
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
1 cup grated Parmesan cheese

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large Dutch oven, cook the beef, onions, carrots and celery over medium heat until meat is no longer pink; drain. Add the tomatoes, salt, garlic powder, pepper and oregano. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until vegetables are tender. , Drain macaroni; add macaroni and spinach to beef mixture. Pour into two greased 3-qt. baking dishes. Number Of Ingredients 15

* 2 packages of frozen spinach
* 1 bag of egg noodles (a pound or so)
* 2 tablespoons of olive oil
* 1 onion chopped
* 4 garlic cloves chopped (I used a zester)
* 4 tablespoons of butter
* 2 rounded tablespoons of flour
* 1 cup of whole milk
* 1 teaspoon of nutmeg
* 2 egg yolks
* handful of cherry tomatoes (sliced in half)
* 1 cup panko breadcrumbs
* 1 cup parmesan cheese
* 1 cup (or 2) of shredded mozzarella cheese
* salt and pepper to taste

Steps:

  • Microwave the spinach according to box instructions. Meanwhile, boil a large pot of water for the noodles.
  • Sautee the onion and garlic with the olive oil in a pan. Salt and pepper.
  • When spinach is done you have to drain it. I don't have a cheesecloth but if you do, squeeze all the water out. If you are like me - use your hands.
  • Add the spinach to the onions and garlic. Add sliced cherry tomatoes and cook for a few minutes.
  • Pour entire mixture into the drained egg noodles and stir. Add your shredded mozzarella cheese and a handful of Parmesan cheese. Stir once more. Salt and pepper.
  • Use the pan you just took the onions and spinach out of and melt the butter over medium heat. Whisk in flour and then the milk. Season with salt, pepper, and nutmeg. Cook until it thickens - around 5 minutes.
  • In a bowl, whisk the egg yolks and then pour some of the butter mixture into the bowl to temper the eggs. Then add eggs into your pan and cook for a few more minutes.
  • Turn on your boiler.
  • Add the butter mixture to your pasta and stir together. Place in your pan.
  • Top with panko breadcrumbs and Parmesan cheese evenly. Place in broiler for a few minutes. Keep an eye that you don't burn the panko breadcrumbs. This is so important because my oven is evil!!!
  • When you feel good about your browning, take the dish out and serve!

2 cloves garlic, finely chopped

1 jar (26 oz) tomato pasta sauce

1 box (9 oz) frozen chopped spinach, thawed, squeezed to drain
2 cups shredded Monterey Jack cheese (8 oz)
1 1/2 cups sour cream
1 egg, slightly beaten
1 teaspoon garlic salt
1 1/2 cups shredded Parmesan cheese (6 oz)

Steps:

  • Heat oven to 350°F. Spray 3-quart casserole with cooking spray. Cook and drain noodles as directed on package, using minimum cook time. In nonstick skillet, cook beef, garlic, salt and pepper over medium-high heat 5 to 7 minutes until beef is thoroughly cooked; drain. Stir in pasta sauce and Italian seasoning.

1 1/4 pounds ground chuck
One 15-ounce can tomato sauce
1/2 teaspoon salt
Freshly ground black pepper
8 ounces egg noodles
1/2 cup sour cream
1 1/4 cups small curd cottage cheese
Pinch red pepper flakes
1/2 cup sliced green onions (less to taste)
1 cup grated sharp Cheddar
Crusty French bread, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Brown the ground chuck in a large skillet. Drain the fat, and then add the tomato sauce, 1/2 teaspoon salt and plenty of freshly ground black pepper. Stir, and then simmer while you prepare the other ingredients.
  • Cook the egg noodles until al dente. Drain and set aside.
  • In a medium bowl, combine the sour cream and cottage cheese. Add plenty of freshly ground black pepper and a pinch of red pepper flakes. Add to the noodles and stir. Add the green onions and stir.

  • To freeze: Assemble the Sour Cream Noodle Bake in a disposable aluminum oven-proof pan and seal the top of the container with the lid or heavy foil. Seal the edges to prevent freezer burn and place in the freezer.

1 tablespoon butter (or sub olive oil)
8 ounces baby bella mushrooms, sliced
½ yellow onion, sliced
3 cloves garlic, minced
1 pound lean ground beef (90% is good)
1 (5 oz) bag spinach, chopped (or leave spinach leaves as is!)
1 cup milk of choice (we do unsweetened almond milk)
4 cups low sodium beef or chicken broth
10 ounces uncooked wide egg noodles
1 cup shredded mozzarella cheese
½ cup parmesan cheese
Freshly ground salt and pepper, to taste

Steps:

  • Cook your mushrooms: place a large pot over medium-high heat and add in 1 tablespoon butter. Once butter melts, add in the mushrooms, onions, garlic and salt and pepper. Stir occasionally until mushrooms and onions are cooked down and mushrooms start to brown slightly about 5-7 minutes. Transfer to a bowl.
  • In the same pot add in your ground beef then season with salt and pepper, and break up the meat, cooking until no longer pink, about 5-8 minutes. Add mushroom & onion mixture back to the pot then stir in the spinach. Once spinach wilts down, immediately add in milk and chicken broth.
  • Next, stir in the egg noodles and bring to a slight boil; you'll cook until the pasta is nice and tender, about 10-12 minutes (depending on your pasta shape) and most of the liquid (but not all!) is absorbed. You'll want a little bit of liquid left to make the sauce nice and creamy.
  • Remove from heat and stir in the mozzarella and parmesan cheese and add additional salt and pepper to taste. Serve immediately and enjoy! Serves 4.

1 yellow onion, diced

Kosher salt and freshly ground black pepper
1 tablespoon tomato paste
12 ounces egg noodles
2 1/2 cups beef broth
1 tablespoon grainy mustard
1 teaspoon smoked paprika
A few dashes Worcestershire sauce
1/3 cup sour cream
2 tablespoons heavy cream
2 tablespoons chopped fresh chives

Steps:

  • Heat the butter in a large skillet over medium heat. Add the onion and garlic and cook for 1 minute. Add the ground chuck and sprinkle with salt and pepper. Cook the meat, crumbling as you go, until cooked through, about 5 minutes. Add the tomato paste and cook for about 30 seconds.
  • Add the noodles, broth, 1 cup hot water, the mustard, paprika and Worcestershire sauce. Give a big stir and bring to a simmer. I was surprised at how few recipes there were on here for ground beef and spinach with pasta, aside from lasagna and manicotti, so I made this up one night.

2 teaspoons oil
1 onion, chopped
250 g ground beef or 250 g ground pork
2 (400 g) cans chopped tomatoes
1 teaspoon garlic powder
2 teaspoons chili flakes
salt and pepper, to taste
10 ounces frozen spinach
200 g tagliatelle pasta noodles (or other pasta)
1/3 cup grated parmesan cheese

Steps:

  • Saute the onion in a deep frying pan for 1-2 minutes, then add the ground beef.
  • Cook until beef is browned, then add the tomatoes, spices, salt and pepper to taste.
  • Simmer for 3-4 minutes, then add the spinach and simmer 3-4 minutes more.
