FALL VEGETABLE SLOPPY JOES

Fall Vegetable Sloppy Joes image

I make this dish in the fall and sneak grated vegetables into the sloppy joe mixture. It's especially handy when children don't like to eat their vegetables! Just walk away until the end of the day and let the slow cooker do all the work. Also delicious: Top the filling with a little shredded cheese before serving. -Nancy Heishman, Las Vegas, Nevada

  • Don't overcook the vegetables. You want them to be tender, but not mushy. Cook them over medium heat until they are just starting to soften.
  • Use a good quality ground beef. This will make a big difference in the flavor of your sloppy joes. Look for ground beef that is at least 80% lean.
  • Season the ground beef well. Use a variety of spices, such as salt, pepper, garlic powder, and onion powder. You can also add a bit of chili powder or cumin for a little extra flavor.
  • Cook the ground beef until it is browned. This will help to develop its flavor and make it more tender.
  • Drain the grease from the ground beef. This will help to reduce the fat content of your sloppy joes.
  • Add the vegetables and sauce to the ground beef. Stir until everything is well combined.
  • Simmer the sloppy joe mixture for at least 15 minutes. This will help to develop the flavors and thicken the sauce.
  • Serve the sloppy joes on hamburger buns. You can also serve them on slider buns, English muffins, or even rice.
