1 pound beef stew meat, cut into 1/2-inch cubes
1 small meaty beef soup bone (beef shanks or short ribs)
2 tablespoons vegetable oil
4 cups water
1 can (28 ounces) diced tomatoes, undrained
1 cup chopped carrots
1 cup chopped celery
1/4 cup chopped celery leaves
1 tablespoon salt
1/2 teaspoon dried marjoram
1/2 teaspoon dried basil
1/4 teaspoon dried savory
1/4 teaspoon dried thyme
1/8 teaspoon ground mace
1/8 teaspoon hot pepper sauce

Steps:

  • In a Dutch oven or soup kettle, brown the stew meat and soup bone in oil. Add the remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 4-5 hours or until meat is tender. Skim fat. Remove meat from bone; cut into 1/2-in. cubes. Return to soup; heat through.

3 stalks celery, chopped
1 teaspoon salt

4 (28 ounce) cans tomatoes (I use diced tomatoes.)
2 (10 ounce) cans tomato soup
10 -15 cups beef broth
3 -4 cups uncooked macaroni
1/2 teaspoon Worcestershire sauce

  • Saute ground beef, onions and celery.

6 tablespoons shredded fresh Parmesan cheese

Steps:

  • In 4-quart saucepan or Dutch oven, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.

1 large green pepper, chopped
2 tablespoons oil
3 medium potatoes, peeled and cubed
3 medium carrots, chopped
4 cups beef broth
1 cup water (or 5 cups beef broth)
2 tablespoons paprika
1 tablespoon sugar
salt and pepper
1/4 teaspoon cayenne pepper
2 bay leaves
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste

Steps:

  • In a large Dutch oven or heavy-bottomed stock pot, cook and stir the beef, onion and green pepper in the 2 tbsp oil until meat is browned on all sides; drain the oil.
  • Add in the next 10 ingredients.
  • Bring to a boil.
  • Reduce heat; cover and simmer for 35-30 mins, or until the potatoes are tender.

1 medium cauliflower, ...small florets, or use frozen
3 Tbsp butter
1 lb ground beef
1 medium tomatoes,.... canned and cut up
3/4 c chopped onion
8 c hot...water....yes hot!
1/4 tsp pepper
1 tsp celery salt
1/4 c parsley flakes
1 c elbow maccaroni.......to cook in the soup
parmesan grated cheese.... to taste

Steps:

  • 1. Prepare the cauliflower head. Wash and cut off the florets. Put in cold water with 1 teaspoon of salt. Let sit at least 10-15 minutes while you continue with the recipe.
  • 2. Peel and dice the onion. Set aside.
  • 3. Melt butter in a saucepan. Brown the ground beef slightly.
  • 4. Add the tomatoes and onions and drained cauliflower to the pot with the ground beef.
  • 5. Add 4 cups hot water to the same pot. Cover tightly and simmer for thirty minutes
  • 6. Add the remainder of hot water (4 cups), uncooked dry elbow macaroni , pepper, parsley and celery salt. cook until macaroni's are tender. If freezing soup..Add the pasta when soup is thawed!

28 oz tomatoes, canned and cut up-undrained
1 c sliced carrot
1 c chopped celery
1/4 c snipped celery leaves

1/2 tsp basil, dried-crushed
1/4 tsp savory dried-crushed
1/4 tsp thyme, dried-crushed
