BEEF RAGOUT

Beef Ragout image

My mother used to serve this to our family as a one-dish meal by adding sliced potatoes with the carrots. I've updated it by substituting mushrooms for the potatoes and adding chili sauce. It's also good over rice or mashed potatoes.

RAGOUT OF BEEF WITH RED WINE

Ragout of Beef with Red Wine image

Provided by Food Network

Categories     main-dish

Time 1h10m

Yield 4 servings

Number Of Ingredients 13

1/4 cup flour
1/2 teaspoon salt, plus more for seasoning
1/2 teaspoon black pepper, plus more for seasoning
1 pound round or chuck steak, cubed
1/4 cup vegetable oil
1 large onion, thinly sliced
1 large celery rib, thinly sliced
2 carrots, very thinly sliced
1 large clove garlic, minced
1 teaspoon dried oregano
1 (16-ounce) can stewed tomatoes, with their juices
1 cup red wine
Parsley, chopped (optional)

Steps:

  • In a pie plate, combine flour, salt, and black pepper. Lightly coat both sides of the meat with the seasoned flour: shake off any excess. Reserve the remaining seasoned flour to use in the gravy later. Heat 2 tablespoons of the oil in a large skillet. Add the meat and cook over high heat, turning once, for 1 to 2 minutes per side, until browned. Remove with tongs or a fork to a plate, (Depending upon the skillet size, this may need to be done in 2 batches. Do not crowd pan, or the meat will not brown.) Add the remaining 2 tablespoons of oil to the drippings in the pan along with the onion, celery, and carrots. Cook over medium-high heat, stirring, for 2 minutes, until lightly browned. Reduce the heat to low, cover the skillet, and cook for about 10 minutes, until the vegetables are almost tender. Add the garlic and sprinkle the reserved seasoned flour over vegetables. Cook, stirring 1 minute. Add oregano, tomatoes with their juices, and the wine. Return the meat and any accumulated juices to the pan. Bring to a simmer, cover, and cook over low heat for 20 minutes, or until the meat and vegetables are tender. Season with additional salt and pepper to taste. And stir in optional parsley if you desire.

SICILIAN BEEF RAGOUT

Sicilian Beef Ragout image

This recipe was developed to accompany the dense, earthy wines of Sicily, specifically the ones made with the grape known as nero d'Avola. It is a hearty beef ragout enriched with the wine, fresh herbs, olives, chiles and tomatoes, roasted to reduce the liquid and concentrate the flavor. Like most treasures of the stew pot, the dish benefits from a rest and a reheat. If you store the tomatoes in a microwave-safe container, they can be warmed with a 30-second zap.

Time 3h

Yield 6 to 8 servings

Number Of Ingredients 15

4 cloves garlic, minced

1 teaspoon crushed red chile flakes
1 1/2 cups robust red wine
1/2 cup beef stock
3 branches fresh rosemary

Stir in the flour, cook for a moment or two, than add olives, chile flakes and wine. Stir, scraping pan, and bring to a simmer. Add stock. Return meat and its juices to the casserole. Top with branches of rosemary and remaining thyme. Cover and place in the oven. Place the pan of tomatoes in the oven. Cook both for 2 hours.
  • Remove the pans from the oven. Check seasonings of meat. Transfer meat and sauce to a serving dish, arrange tomatoes on top and serve together.

BRAISED BEEF SHORT RIBS WITH ROOT VEGETABLE RAGOûT

Braised Beef Short Ribs with Root Vegetable Ragoût image

Categories     Beef     Meat     Gourmet

Yield Serves 4

Number Of Ingredients 12

1 small onion
1 medium carrot
59.15 ml plus 14.79 ml vegetable oil
236.59 ml cup dry red wine
3 thyme sprigs
1 Turkish bay leaf or 1/4 California bay leaf
.89 g cracked black pepper
four .34-Kilogram beef short ribs (sometimes called Flanken)
all-purpose flour for dusting ribs
473.18 ml veal stock
118.30 ml water if necessary
Accompaniment: root vegetable ragout

Steps:

  • Slice enough onion and chop enough carrot to measure 20 g each. In a 1.42- to 1.89-litre saucepan cook onions and carrots in 14.79 ml oil over moderate heat 2 to 3 minutes, or until softened but not browned. Add wine, thyme, bay leaf, and pepper and simmer 3 minutes. Transfer mixture to a bowl and cool. In a heavy-duty sealable plastic bag combine ribs and wine mixture. Marinate ribs, chilled, turning them occasionally, at least 8 hours and up to 1 day.
  • Preheat oven to 149°C.
  • Remove ribs from marinade and pat dry. Pour marinade through a sieve into a small saucepan and discard solids. Bring marinade to a boil, skimming froth, and remove pan from heat.
  • Season ribs well with salt and pepper and lightly dust with flour. In a heavy ovenproof skillet or flameproof casserole large enough to hold ribs in one layer heat remaining 59.15 ml oil over moderately high heat until it just begins to give off a faint white smoke. Brown ribs, turning them occasionally, and transfer to a plate. Pour off oil from skillet or casserole and add ribs and stock.
  • Pour marinade through a fine sieve into skillet or casserole and bring liquid to a simmer. Cover skillet or casserole with foil or a lid and braise ribs in middle of oven (add water after 3 1/2 hours if most of braising liquid is evaporated) 4 hours, or until meat gives no resistance when pierced with a fork. Pour braising liquid through a sieve into a bowl and skim fat.
  • Serve short ribs with braising liquid and vegetable ragout.

FINNISH BEEF RAGOUT (PALAPAISTI - FINLAND)

Finnish Beef Ragout (Palapaisti - Finland) image

This is from "Best of Finnish Cooking", which holds the author's Finnish recipes for her sons, so that they can always have these dishes. I haven't tried this yet. The only other recipe that uses allspice and heavy cream had cumin in it, which isn't Finnish at all. This dish is often served with browned rutabagas and boiled potatoes. Simmering the ragout can be done on the stovetop or inside the oven. The great thing about round steak is that it is a cheaper piece of meat. However, a long, slow, low-heat simmer is necessary to make it tender. Don't try to rush with higher heat.

Provided by Debbie R.

Categories     Meat

Time 2h30m

Yield 8 serving(s)

Number Of Ingredients 14

2 lbs round steaks (bottom or top, cut into 1-inch cubes)
1 tablespoon oil
1 tablespoon butter
2 medium onions, peeled and chopped
2 carrots, peeled and sliced
1 celery rib, peeled and sliced
2 cups water
1 teaspoon salt
1/2 teaspoon ground allspice
1/2 teaspoon pepper
2 bay leaves
2 -3 tablespoons heavy cream
3 tablespoons flour (preferably granulated, like Wondra)
1/3 cup cold water

Steps:

  • Brown beef cubes on all sides, a few at a time, in the mixture of butter and oil. Don't try to do all at once. It will lower the temperature too much and not be able to brown properly. When done, transfer into a casserole or dutch oven.
  • Lightly brown the onions and vegetables in the same skillet; then put them in the casserole. Rinse the skillet with the 2 cups of water and add it to the casserole. Add salt and spices. Cover and let cook over low heat or in a 325 oven for 2 hours, or until the meat is tender.
  • Mix flour with the 1/3 cup cold water and stir into the casserole along with the cream. Simmer 5 minutes. Add salt to taste.

This will help to develop flavor and color. - Use a good quality red wine. The wine will add depth and flavor to the ragout. - Add vegetables and herbs to the pot. They will add flavor and nutrition to the dish. - Simmer the ragout for at least 2 hours. This will allow the flavors to develop and the beef to become tender. - Serve the ragout over pasta, rice, or mashed potatoes. It can also be served as a stew.

Conclusion:

Beef ragout is a hearty and delicious dish that is perfect for a cold winter night. It is relatively easy to make and can be tailored to your own taste. With a little planning and effort, you can create a beef ragout that your family and friends will love.
