Time 1h30m

Yield 8

Number Of Ingredients 13

1 pound ground beef
½ cup diced onion
2 cloves garlic, minced
1 (15 ounce) can Tex Mex-style diced tomatoes
1 (4 ounce) can chopped green chilies
2 tablespoons chopped fresh cilantro
1 (1 ounce) packet taco seasoning mix
1 (20 ounce) can refried black beans
2 (10 ounce) cans red enchilada sauce (such as Old El Paso®)
2 cups shredded pepperjack cheese
2 cups shredded Monterey Jack cheese
6 (8 inch) flour tortillas
½ cup sour cream, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cook and stir ground beef and onions in a large skillet over medium-high heat until meat is browned and crumbly, 7 to 10 minutes. Add garlic and cook until fragrant, about 30 seconds. Stir in diced tomatoes, green chiles, cilantro, and taco seasoning mix. Remove from heat.
  • Mix black beans and 1 can red enchilada sauce in a bowl until creamy.
  • Mix pepperjack cheese and Monterey Jack cheese together in a separate bowl.
  • Heat a cast-iron skillet over medium heat. Cook tortillas, one at a time, until slightly crisp, about 15 seconds per side.
  • Place one tortilla on the bottom of an 8-inch springform pan. Spread a generous layer of black bean mixture on top of tortilla, then spread a layer of ground beef mixture on top. Sprinkle 1 cup of cheese mixture on top of meat mixture and pour 1/4 cup red enchilada sauce over the top. Repeat the tortilla, bean, meat, cheese, and sauce layering process, finishing with cheese and enchilada sauce on top.
  • Cover pan with aluminum foil and bake in the preheated oven until cheese is bubbling and enchiladas are cooked through, about 40 minutes. Cool for 15 minutes and serve with sour cream.

EASY SHREDDED BEEF GREEN CHILE ENCHILADA CASSEROLE

Easy Shredded Beef Green Chile Enchilada Casserole image

I was looking for a quick and different way to use the leftover shredded beef cooked in a crock pot the day before. I came up with this recipe which is quick and easy without having to roll each tortilla individually . My husband doesn't like corn tortillas or red sauce so I used green sauce and flour tortillas and layered them in a 8 1/2 inch casserole dish that fit the torrillas perfectly. I knew it was a hit when he went back for a second and third helping! It also tastes great left over the next day. You could also make it with shredded chicken. BEAN-AND-BEEF ENCHILADA CASSEROLE

Bean-And-Beef Enchilada Casserole image

I expanded slightly on a recipe in BH&G Make-Ahead Cooking (more ground beef, more cheese, added salt and pepper). We all really enjoyed this. I think it would also be good with chicken. Note: The original recipe didn't indicate the measurements of the baking dish--I would recommend something smaller than 9x12 with higher sides like a lasagna pan.

BEEF-GREEN CHILE ENCHILADA-STYLE BURRITO

Beef-Green Chile Enchilada-Style Burrito image

This recipe is super easy to make and was inspired by a dish I had when I lived in Phoenix, Arizona. While not as good as the real mexican cooks out west, it is very close. My family loves this dish and it is very economical to make.

Categories     Tacos & Burritos

Time 4h10m

Number Of Ingredients 6

4-5 lb chuck roast
2 pkg rick bayless fronterra red chile taco sauce or medium enchilada sauce
4 can(s) green chiles, chopped
10-12 large flour tortillas
2 can(s) medium enchilada sauce
2-3 c mexican cheese or colby-jack cheese, shredded

Steps:

  • 1. Place chuck roast in large dutch oven. Pour red chile taco sauce or 2 cans medium enchillada sauce to pan; then add the 4 cans chopped green chiles. Place lid on dutch oven and bake at 325 degrees approximately 3 1/2-4hrs until fork tender. Time may vary according to the size of the roast, keep a check on the roast - do not let sauce and chiles burn.
  • 2. Let roast cool slightly. Shred roast, removing fat, with two forks in same pan that it was cooked in. Mix shredded roast in with the sauce and green chiles that are in the pan.
  • 3. Place the mixture length-wise at the narrow part of the flour tortilla, do not be skimpy but do not get too much in the tortilia. Fold sides inward and then fold up longways into a roll. After you have all the burritos completed, place in a 9x13 pan that has been lightly sprayed with a cooking spray. Pour the 2 cans of medium enchillada sauce over the top of the burritos and top with cheese. Cover and bake at 325 degrees approximately 30 minutes. Remove covering and bake until the cheese has slightly browned.
  • 4. HINT: Spray the bottom side of the aluminum foil (side closest to the pan/cheese) and the cheese will not stick to the aluminum foil.

Tips:

  • Marinate the beef. Marinating the beef helps to tenderize it and add flavor. You can use a variety of marinades, such as a simple mixture of olive oil, garlic, and cumin, or a more complex marinade with ingredients like chili powder, paprika, and oregano.
  • Cook the beef until it is fall-apart tender. This will ensure that the enchiladas are juicy and flavorful. You can cook the beef in a slow cooker, a Dutch oven, or even in the oven.
  • Use a variety of fillings. In addition to beef, you can also add other fillings to your enchiladas, such as beans, rice, vegetables, or cheese. This will help to create a more complex and flavorful dish.
  • Don't skimp on the sauce. The sauce is what really brings the enchiladas together. Make sure to use a flavorful sauce that has a good balance of acidity and spice.

Conclusion:

Beef enchiladas are a delicious and versatile dish that can be made with a variety of ingredients. By following these tips, you can make sure that your enchiladas are juicy, flavorful, and packed with all of your favorite fillings. So next time you're looking for a quick and easy weeknight meal, give beef enchiladas a try!
