Time 1h35m

Yield 6 servings

Number Of Ingredients 15

1 (2-pound) beef tenderloin roast
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 teaspoons olive oil
1/2 cup chopped shallots
1 small carrot, finely chopped
1 stalk celery, finely chopped (about 1/4 cup)
1 clove garlic, minced (about 1 teaspoon)
2 cups dry red wine
2 cups low-sodium beef broth
2 tablespoons tomato paste
1 bay leaf
1 sprig fresh thyme
1 tablespoon unsweetened natural cocoa powder
1 teaspoon chopped fresh rosemary leaves

Steps:

  • Preheat the oven to 425 degrees F.
  • Season the meat with the salt and pepper. In a large skillet, heat 2 teaspoons of the oil over medium-high heat until good and hot, then add the meat and sear until well browned on all sides, about 10 minutes total.
  • Transfer the meat to a rack set on a baking sheet. Roast until an instant-read thermometer inserted in the thickest part registers 140 degrees F for medium-rare, about 30 minutes, or to your desired degree of doneness. Remove it from the oven, cover with aluminum foil, and let rest until the sauce is nearly done before slicing.
  • While the meat cooks, make the sauce. Heat the remaining 2 teaspoons of oil in a large saucepan over medium-high heat. Add the shallots, carrot and celery and cook, stirring a few times, until softened, about 5 minutes. Add the garlic and cook for 2 minutes more. Add the wine and broth and stir in the tomato paste. Add the bay leaf and thyme and bring to a boil. Simmer until the liquid is reduced to about 1/2 cup, about 40 minutes. Strain through a fine mesh strainer into a small saucepan. Stir in the cocoa and rosemary and season with salt and pepper. Serve on the side with the sliced tenderloin.
  • Serving size 3 slices of meat and about 1 1/2 tablespoons of sauce

Yield Makes 12 Hors d'oeuvres

Number Of Ingredients 8

1 pound flatiron or blade steak, cut into 3/4-to 1-inch cubes
1/2 teaspoon finely chopped garlic
2 tablespoons olive oil
1 1/2 teaspoons bottled ajíí panca paste (sometimes labeled "crema")
1 tablespoon red-wine vinegar
1 tablespoon minced onion
1/4 teaspoon crumbled dried oregano (preferably Mexican)
Equipment: 12 (6-inch) wooden skewers, soaked in water 30 minutes

Steps:

  • Toss steak with 1/4 teaspoon salt and 1/8 teaspoon pepper in a bowl.
  • Mince and mash garlic to a paste with a pinch of salt, then stir together with remaining ingredients and toss well with beef. Marinate, chilled, at least 1 hour.
  • Thread steak onto skewers, leaving a small space between each piece and transferring to a tray (discard marinade).
  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas); see Grilling Procedure .
  • Oil grill rack, then grill skewers, covered only if using a gas grill, turning once, 5 to 6 minutes total for medium-rare.
  • What to drink:
  • Concha y Toro Terrunyo Casablanca Valley Sauvignon Blanc '07

Tips:

  • For the perfect beef brochette, use a tender cut of beef, such as filet mignon or strip loin. Cut the beef into 1-inch cubes and marinate it in a flavorful mixture of olive oil, garlic, herbs, and spices.
  • Soak the wooden skewers in water for at least 30 minutes before threading the beef cubes onto them. This will prevent the skewers from burning during cooking.
  • Cook the beef brochettes over medium heat, turning them frequently, until they are cooked to your desired doneness. For medium-rare, cook the brochettes for about 5-7 minutes per side. For medium, cook the brochettes for about 7-9 minutes per side.
  • While the beef brochettes are cooking, prepare the taleggio cheese sauce. In a saucepan, melt the butter over medium heat. Add the flour and whisk until smooth. Gradually whisk in the milk and continue cooking until the sauce thickens. Stir in the taleggio cheese and cook until melted and smooth.
  • To make the spicy chocolate sauce, melt the chocolate and butter together in a double boiler or in the microwave. Stir in the cayenne pepper, chili powder, and cinnamon. Season with salt and pepper to taste.
  • Serve the beef brochettes with the taleggio cheese sauce and the spicy chocolate sauce. Garnish with fresh herbs, such as basil or parsley.
