1 tablespoon plus 2 teaspoons olive oil
1/2 cup finely diced yellow onions
1/2 cup grated carrots (see Cook's Note)
1/2 cup grated broccoli
1 jalapeño, seeds and membrane removed, finely minced
1 teaspoon chili powder
1 teaspoon garlic powder
1/2 teaspoon ground cumin
1 pound lean ground sirloin
1/2 cup grated oats (see Cook's Note)
1/2 cup canned black beans, drained and rinsed, pulsed in a food processor
1 tablespoon Worcestershire sauce
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 large egg, lightly beaten
6 hamburger buns, toasted
Sliced avocado, sliced tomato and ranch dressing, for topping

Steps:

  • Heat 2 teaspoons of the oil in a large skillet over medium heat. Add the onions, carrots, broccoli and jalapeño. Cook, stirring often, until the vegetables are tender, about 5 minutes. Add the chili powder, garlic powder and cumin. Cook to bloom the spices, about a minute. Transfer to a large mixing bowl; reserve the skillet.
  • Combine the vegetables with the beef, oats, beans, Worcestershire sauce, salt, pepper and egg. Lightly mix and form evenly into 6 patties.
  • In the same skillet, heat the remaining tablespoon oil over medium-high heat. Cook the burgers until browned and crusty on both sides, about 3 minutes per side.
  • Transfer the burgers to the buns, top with sliced avocado and tomato and drizzle with ranch dressing.

1 (14.5 ounce) can Italian-style stewed tomatoes
salt and ground white pepper to taste
4 medium zucchini
1 (8 ounce) package shredded sharp Cheddar cheese

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.

1/2 tsp garlic powder
1 medium onion, chopped
1 lb zucchini, sliced thin, unpeeled
2 c cooked rice
2 c cottage cheese
10 oz can cream of mushroom soup, undiluted
1/2 tsp salt
1 c grated sharp cheddar cheese
1/2 c grated parmesan cheese

Steps:

  • 1. Place beef, garlic powder and onion in a 2 -quart casserole. Microwave 5 minutes, stirring after 3 minutes Drain any fat.
  • 2. Add zucchini, rice, cottage cheese, soup and salt. Mix well Sprinkle cheddar and parmesan cheeses over the top. Cover Microwave 8 minutes until bubbly. This also reheats nicely.

3 tablespoons salsa
1/2 teaspoon Worcestershire sauce
1/8 teaspoon pepper
2 teaspoons olive oil
1 medium onion, finely diced
1 zucchini, finely diced
1 1/4 lbs ground chuck or 1 1/4 lbs ground turkey
2 teaspoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon pepper
4 (7 inch) pita breads, warmed

  • Make sauce: combine all ingredients in a small bowl.
  • Heat oil in nonstick skillet; add onion, half the zucchini and cook 3-4 minutes, until tender.

1/2 cup cornmeal
1 1/2 cups (packed) coarsely grated zucchini (from about 1 medium zucchini), squeezed to remove excess water, divided
1/3 cup white beans, rinsed, divided
1/4 cup frozen corn (preferably fire-roasted) , thawed, divided
2 tablespoons vegetable oil, divided, plus more for brushing
3/4 cup cooked millet or white quinoa
1/2 cup finely chopped basil, divided
1 teaspoon kosher salt, divided
1 teaspoon freshly ground black pepper, divided
1/3 cup mayonnaise
1 1/2 teaspoons finely grated lime zest
1 1/2 teaspoons fresh lime juice
4 slices white cheddar
4 hamburger buns
Green leaf lettuce, (for serving)
1 avocado, cubed, lightly smashed

Steps:

  • Cut onion in half crosswise. Slice one-half into 1/4" rings; set aside. Finely chop remaining onion. Pulse chopped onion, garlic, cornmeal, 3/4 cup zucchini, 2 Tbsp. beans, and 2 Tbsp. corn in a food processor until finely chopped, 30-45 seconds.

Add remaining 3/4 cup zucchini and cook, stirring occasionally, until zucchini begins to soften and become translucent, 3-4 minutes more.
  • Transfer mixture to a large bowl and gently mix in millet, 1/4 cup basil, 3/4 tsp. salt, 3/4 tsp. pepper, and the remaining beans and corn until well combined. Form mixture into 4 (1"-thick) patties. Cover with plastic and freeze 20 minutes.
  • Meanwhile, combine mayonnaise, lime zest, lime juice, and remaining 1/4 cup basil in a small bowl; set aside.
  • Prepare a grill for medium-high heat or heat a grill pan or cast-iron skillet over medium-high; oil grate or pan. Toss reserved onion rings with 1 Tbsp. oil and remaining 1/4 tsp. salt and 1/4 tsp. pepper. Cook onion rings until softened and lightly charred, about 5 minutes.
  • Brush patties all over with oil. Cook, flipping once, until medium brown and toasted, about 7 minutes on each side; add 1 slice cheese to each during last 3 minutes of cooking. Transfer onions and burgers to a plate. Toast buns until golden brown, about 30 seconds.
