Kosher salt
1 pound orecchiette
1 stick (8 tablespoons) salted butter
3/4 cup pancetta cubes
1 teaspoon fresh thyme, minced
2 cloves garlic, minced
1/2 yellow onion, diced
2 lemons, zested and juiced
2 cups frozen peas, thawed
3/4 cup heavy cream
1 cup grated Pecorino
2 tablespoon olive oil
1/2 cup panko breadcrumbs
Kosher salt and freshly ground black pepper
2 teaspoons lemon zest plus 1 lemon, cut into wedges, for garnish
1 teaspoon fresh thyme, minced

Steps:

  • For the pasta and sauce: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions.
  • Meanwhile, melt the butter in a large skillet over medium heat. Add the pancetta, thyme, garlic and onions and cook until the onions soften, 2 to 3 minutes. Stir in the the lemon zest and juice and bring to a simmer. Stir in the peas and cream, bring to a simmer and simmer until slightly thickened, about 2 minutes.
  • For the pangrattato (crispy crumbs): Meanwhile, add the olive oil to a saute pan over medium-low heat. Add the panko, tossing to coat in the oil, and then season with salt and pepper. Cook, tossing occasionally, until the panko is golden brown, 3 to 4 minutes. Remove from the heat, add the lemon zest and thyme and stir everything together.
  • Stir the Pecorino into the lemony sauce, then drain the pasta, add it to the skillet of sauce and toss together. Taste and adjust the seasoning as needed.
  • Sprinkle the pangrattato over the pasta and garnish with the lemon wedges. Serve straight from the skillet.

2 cans (19 oz/540 mL EACH) Italian or chili-style tomatoes
1 package (approx. 250 g) refrigerated ravioli
2 cup baby spinach
1 cup pitted ripe olives, chopped
Feta, Parmesan or Tex Mex cheese

Steps:

  • 1. Pan-fry ground beef over medium heat for 8 to 10 minutes or until browned and completely cooked. Drain. Stir in tomatoes; simmer 10 minutes, stirring occasionally.

2 cans (14-1/2 ounces each) beef broth

1 medium green pepper, chopped

400g beef rump steak, trimmed
1 tbsp butter
1 tbsp olive oil
300g small button mushroom
400g pappardelle pasta
3 shallots, finely chopped
1 tbsp plain flour
300ml beef stock
1 tbsp Dijon mustard
1 tbsp tomato purée
3 tbsp crème fraîche
½ x 20g pack flat-leaf parsley, chopped

Steps:

  • Freeze the beef for 45 mins before you begin, slice as thinly as you can, then season.
  • In a large, non-stick frying pan, melt half the butter with half the oil. Increase the heat, then quickly sear the beef in batches until browned on both sides. Remove the meat and set aside. Repeat with the mushrooms, then set aside with the beef. Boil the pasta.
  • Add the remaining butter and oil to the pan and soften the shallots for a few mins. Stir in the flour for 1 min, then gradually stir in the stock. Bubble for 5 mins until thickened, then stir in the mustard, purée, crème fraîche and seasoning. Bubble for 1 min more, then return the beef and mushrooms to the pan.
  • Drain the pasta, toss with half the parsley, season, then serve with the creamy stroganoff, sprinkled with the remaining parsley.
