BEECHER'S "WORLD'S BEST" MAC & CHEESE
On a recent trip to Seattle we were lucky enough to visit Beecher's Handmade Cheese at Pike Place Market. They made the BEST mac and cheese I have ever had... and believe me I've had a LOT of mac and cheese! Imagine my delight when I found that they published their recipe on their website! So, here it is... of course you have to substitute locally found cheeses for their cheeses but I'm sure it will be just as delicious.

WORLD'S BEST MAC AND CHEESE
It's a bold claim, but this mac and cheese from Kurt Beecher Dammeier's "Pure Flavor" cookbook is that good. Three types of cheese-cheddar, Gruyere, and Jack-add plenty of richness, while a touch of chipotle-chile powder imbues the dish with a subtle smoky flavor.

Tips:
- Use a quality cheese: Beecher's Flagship cheddar is ideal, but you can also use a sharp cheddar or a blend of cheeses.
- Shred your own cheese: Pre-shredded cheese contains cellulose, which can make the sauce grainy.
- Use a roux: A roux is a mixture of butter and flour that helps to thicken the sauce and prevent it from curdling.
- Don't overcook the pasta: Cook the pasta al dente, so that it still has a slight bite to it.
- Use a combination of milk and cream: This will give the sauce a rich and creamy flavor.
- Season the sauce to taste: Add salt, pepper, and other spices to taste.
- Top the mac and cheese with breadcrumbs: This will give it a golden brown crust.
- Bake the mac and cheese until it is bubbly and golden brown: This will help to melt the cheese and create a gooey, delicious sauce.
Conclusion:
Beecher's World's Best Mac and Cheese is a delicious and easy-to-make dish that is perfect for any occasion. With its creamy sauce, gooey cheese, and golden brown crust, it is sure to be a hit with everyone who tries it.
