6 bone-in split chicken breasts or 1 broiler fryer cut up (I remove the skin)
1/2 tsp salt
1/4 tsp black pepper
4 Tbsp butter
1/2 c chopped onion
1/2 c thinly sliced celery
1 can(s) whole-berry cranberry sauce, 16 oz.
1 c regular or honey barbecue sauce

Steps:

  • 1. Salt and pepper the chicken. Melt butter in a large skillet and brown chicken on all sides. Transfer to a greased 9x13x2 baking dish.
  • 2. Saute onions and celery in the chicken and butter drippings until tender. Add cranberry and barbecue sauces. Mix well and cook 2-3 more minutes. Pour evenly over top of chicken.
  • 3. Bake uncovered at 350 for 1 1/2 hours or until chicken juices run clear. Spoon sauce over chicken every 15 minutes of baking time. Arrange chicken on a serving platter and pour sauce over all pieces.

16 boneless skinless chicken breast halves (4 ounces each)
2 cups sour cream
1/4 cup lemon juice
4 teaspoons Worcestershire sauce
2 teaspoons celery salt
2 teaspoons pepper
2 teaspoons paprika
1 teaspoon seasoned salt
1 teaspoon garlic salt
1-1/2 to 2 cups crushed butter-flavored crackers
1/2 cup canola oil
1/2 cup butter, melted

Steps:

  • Place the chicken in 2 large shallow bowls. In another bowl, combine the sour cream, lemon juice, Worcestershire sauce and seasonings. Pour over chicken; turn to coat. 8 boneless skinless chicken breasts
1/4 cup butter
1 bag fresh spinach, cooked and well drained
4 ounces cream cheese with herbs (I like Rondele)
1/2 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon nutmeg
2 eggs, beaten
1 package Ritz cracker, crushed (sleeve)

Steps:

  • Melt butter in a 9x13 inch baking dish.
  • Lay 4 chicken breasts, not in the baking dish, and top with 1/4 of the spinach and 1 oz of the cheese on each breast.
  • Place another chicken breast on top of each one and press down.
  • Mix together the flour, salt and nutmeg and then dip the breast"sandwiches" in the mixture, then in the eggs, and then in the cracker crumbs.
