MANGO-LICIOUS TILAPIA

Mango-licious Tilapia image

My son's girlfriend, Nicole, named this 'mango-licous'. The mango salsa is great over the tilapia, as a dip or on cottage cheese. Try serving the tilapia over brown basmati rice or lightly dressed salad greens for a complete meal. Then generously top with the salsa. Mango-licious!!

GRILLED TILAPIA WITH MANGO SALSA

Grilled Tilapia with Mango Salsa image

Don't let the list of ingredients fool you: this is super-easy, and gets rave reviews whenever I serve it. The salsa can be made the day ahead to save time. Strawberries can be substituted for the mango if you prefer--both are excellent! Combine leftover salsa with some drained black beans the next day for lunch.

Number Of Ingredients 16

⅓ cup extra-virgin olive oil
1 tablespoon lemon juice
1 tablespoon minced fresh parsley
1 clove garlic, minced
1 teaspoon dried basil
1 teaspoon ground black pepper
½ teaspoon salt
2 (6 ounce) tilapia fillets
1 large ripe mango, peeled, pitted and diced
½ red bell pepper, diced
2 tablespoons minced red onion
1 tablespoon chopped fresh cilantro
1 jalapeno pepper, seeded and minced
2 tablespoons lime juice
1 tablespoon lemon juice
salt and pepper to taste

Steps:

  • Whisk together the extra-virgin olive oil, 1 tablespoon lemon juice, parsley, garlic, basil, 1 teaspoon pepper, and 1/2 teaspoon salt in a bowl and pour into a resealable plastic bag. Add the tilapia fillets, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 1 hour.

Tips:

  • Choose fresh tilapia fillets. Look for fillets that are firm and have a mild, sweet smell. Avoid fillets that are slimy or have a strong fishy odor.
  • Marinate the tilapia fillets before cooking. This will help to infuse them with flavor and moisture. You can use a variety of marinades, such as a simple mixture of olive oil, lemon juice, and herbs, or a more complex marinade made with yogurt, spices, and vegetables.
  • Cook the tilapia fillets over medium heat. This will help to prevent them from drying out. If you are cooking the fillets in a skillet, be sure to sear them for a few minutes per side before reducing the heat and cooking them through.
  • Serve the tilapia fillets with a variety of sides. Some popular sides include roasted vegetables, grilled fruit, or a simple green salad.

Conclusion:

BBQ mango tilapia is a delicious and healthy meal that is perfect for a summer cookout. The tilapia fillets are marinated in a flavorful mixture of mango, lime juice, and spices, then grilled to perfection. The result is a moist and flaky fish with a slightly sweet and tangy flavor. Serve the tilapia fillets with your favorite sides for a complete and satisfying meal.
