Time 1h10m

Yield 8-10 serving(s)

Number Of Ingredients 10

1 tablespoon extra virgin olive oil
2 medium onions, chopped
2 garlic cloves, minced
568 ml tomato juice
1 (30 ounce) can diced tomatoes
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon fresh ground pepper (to taste)
1 cup rice
1 bunch fresh basil (to taste)

Steps:

  • Heat oil in large soup pot.
  • Add onions and sauté a few minutes.
  • Add garlic and sauté one minute (until fragrant).
  • Add tomato juice, diced tomatoes, herbs, salt and pepper.
  • Bring to a simmer.
  • Add rice.
  • When rice is almost cooked add fresh basil and finish cooking until rice is to your liking.
  • Serve with salted tops soda crackers.

Tips:

  • Use fresh, flavorful ingredients: This will make a big difference in the taste of your soup. Look for ripe tomatoes, fresh basil, and high-quality olive oil.
  • Don't be afraid to experiment with different types of rice: Arborio or Carnaroli rice are traditional choices for risotto, but you can also use other short-grain or medium-grain rices, such as jasmine or basmati.
  • Cook the rice properly: Follow the package instructions for cooking the type of rice you are using. Generally, you will want to cook the rice in a flavorful liquid, such as broth or stock, until it is tender but still has a slight bite to it.
  • Add the vegetables and herbs at the right time: Add tender vegetables, such as zucchini or peas, towards the end of cooking so that they don't overcook. Add herbs, such as basil or parsley, just before serving for maximum flavor.
  • Season to taste: Add salt, pepper, and other seasonings to taste. You may also want to add a squeeze of lemon juice or a grating of Parmesan cheese.

Conclusion:

Basil rice soup is a delicious and versatile dish that can be enjoyed for lunch, dinner, or even as a light snack.
