Indulge in the symphony of flavors presented by twice-baked potatoes elevated with a vibrant basil pesto. This culinary masterpiece begins with perfectly baked potatoes, carefully scooped out to create a vessel for a medley of tantalizing fillings. The star of the show, basil pesto, shines through with its herbaceous aroma and nutty undertones.

Complementing the pesto's vibrancy, a delightful blend of cheeses, including Parmesan, mozzarella, and cream cheese, melts together to create a rich and creamy filling. Crispy bacon bits add a savory crunch, while sun-dried tomatoes contribute a tangy and sun-kissed flavor. The potatoes are then topped with a golden-brown breadcrumb crust, adding a delightful textural contrast.

This recipe also includes a delectable variation featuring goat cheese, walnuts, and honey. This version offers a piquant and nutty twist, with the sweetness of honey balancing the tangy goat cheese. Butternut squash adds a touch of sweetness and a vibrant orange hue to the filling.

Whether you prefer the classic basil pesto filling or the unique goat cheese and butternut squash combination, these twice-baked potatoes promise an unforgettable culinary experience.

TWICE BAKED POTATOES WITH MOZZARELLA, TOMATO AND BASIL

Twice Baked Potatoes With Mozzarella, Tomato and Basil image

I love this flavourful variation on the usual twice baked potatoes. It looks bright and colourful too. The pine nuts provide a lovely nuttiness and texture but they can be left out if they are not to your liking.

Time 1h15m

Yield 4-6 serving(s)

Number Of Ingredients 7

4 baking potatoes
8 cherry tomatoes
1 1/2 cups grated mozzarella cheese
2 tablespoons chopped fresh basil leaves
2 tablespoons pine nuts
1/2 cup cream cheese
salt and pepper, to taste

Steps:

  • Preheat the oven to 350°F or 180°C.
  • Bake the potatoes in the oven for about an hour, until the skins are firm and the centre is soft.
  • Meanwhile, chop the cherry tomatoes into eighths and set aside. Add the grated mozzarella, chopped basil and pine nuts.

  • Add the mozzarella and tomato mixture to the mashed potato and scoop back into the shells.
  • Place on a foil-covered baking tray and bake for 5-10 minutes, until the filling is hot and beginning to turn golden.
  • Serve hot!

TWICE-BAKED POTATOES

Twice-Baked Potatoes image

At its simplest, a twice-baked potato is creamy, cheesy mashed potatoes cradled in crisp, salty skin. That's the recipe you see here: comforting, satisfying and pretty much ideal. But if you dream of other flavor combinations, like bacon, scallions and sour cream; blue cheese and chives; or cauliflower and Parmesan, just follow the recipe below and stir in any additions (reserving some for garnish) after the dairy in Step 3. Shower the top with more grated cheese if you like, then bake, garnish and dig in.

Time 2h

Yield 4 servings

Number Of Ingredients 9

4 tablespoons unsalted butter, cubed and softened
4 large russet potatoes
2 tablespoons canola or other neutral oil
Kosher salt
1/2 cup whole milk
1/2 cup sour cream
1/2 cup grated Cheddar cheese (about 2 ounces)
Black pepper
2 tablespoons chopped chives (optional)

Steps:

  • Position racks in the top and middle of the oven, and heat oven to 400 degrees. Take the butter out of the refrigerator to soften. Scrub the potatoes clean and pat them dry. Poke holes all over them with a fork. In a large bowl, toss them with the oil and 1/2 teaspoon salt. Place the potatoes directly on the top rack, and place a baking sheet or a piece of foil on the middle rack to catch drips. Bake for about 1 hour, until the skin is crisp and potatoes offer no resistance when a knife is inserted in their centers. Remove from the oven and let sit until cool enough to handle.
  • Slice the top third lengthwise off the potatoes. Use a spoon to scoop out the flesh, leaving 1/4-inch border of potato on the skin, and transfer the flesh to a medium bowl. Scrape the potato tops of all flesh, and add the flesh to the bowl. Place the bottoms on a parchment-lined baking sheet. (Snack on the tops - chef's treat - or discard.)
  • Mash the potato flesh with a fork or potato masher. Add the butter, and stir until smooth (try not to overwork). Add the milk, sour cream and cheese and stir to combine. (If you want the filling softer, add more milk.) Season generously with salt and pepper. Stir in the chives, if using.
  • Mound each potato skin with a quarter of the filling. Bake the potatoes until warmed through, about 10 minutes. Serve immediately.

BASIL PESTO TWICE-BAKED POTATOES

Basil Pesto Twice-Baked Potatoes image

Potatoes and pesto go so well together that I came up with a new way to mix them. Twice baked potatoes are so convenient as they don't require any last-minute fuss! They are also easy to reheat from the fridge if you make a large batch. If you can't find mascarpone cheese, I'm sure cream cheese would work just fine although it wouldn't give quite the same flavour.

Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 6

1 lb potato, suitable for baking (about 4 potatoes)
1 tablespoon mascarpone cheese
4 tablespoons basil pesto
salt and pepper, to taste (optional)
1/4 cup grated mozzarella cheese
2 tablespoons pine nuts

Steps:

  • Preheat the oven to 350°F or 180°C.
  • Bake the potatoes in the oven for about an hour, until the skins are firm and the centres are soft.
  • When the potatoes are cooked, remove from the oven. Halve them lengthways and scoop out the majority of the flesh with a spoon. Be very careful not to tear the skin- leave a quarter inch of flesh still in the skin to provide a firm shell.
  • Lightly mash with a fork the flesh that has been removed from the skins. Mix in the mascarpone cheese and basil pesto sauce and season with salt and pepper if desired. Stir well to mix.
  • Add the grated mozzarella and pine nuts and stir to mix.
  • Scoop the filling back into the potatoes, smoothing the tops.
  • Place on a foil-covered baking tray and bake for 10 minutes, until the filling is hot.
  • Serve hot!

Tips

- Use high-quality ingredients. Fresh basil, pine nuts, and olive oil will make the best pesto. - Don't overcook the potatoes. They should be cooked until they are tender but still hold their shape. - For a crispy crust, brush the tops of the potatoes with olive oil before baking them the second time. - If you don't have time to make your own pesto, you can use store-bought pesto. - Add your favorite toppings to the potatoes before serving. Some popular options include grated Parmesan cheese, crumbled bacon, and chopped fresh herbs.
