Time 30m

Number Of Ingredients 7

1 stick room temperature unsalted butter
4 Tbsp fresh basil, chopped
2 lb raw large or jumbo shrimp peeled and deveined
1 1/2 tsp salt
1 1/4 tsp freshly ground black pepper
3 Tbsp olive oil
1/2 c freshly grated parmesan cheese

Steps:

  • 1. Combine the basil and salt to the softened butter mixing to combine.
  • 2. Place butter mixture on a piece of plastic wrap and shape into a log.
  • 3. Wrap tightly and place in refrigerator to harden.
  • 4. Preheat oven to 425 degrees. Place shrimp in a baking dish and season with salt, pepper and olive oil, tossing to coat completely.
  • 5. Cook for 10-15 minutes depending on the size of your shrimp or until they are perfectly pink in color.
  • 6. Remove from oven and slice the basil butter over the top, and sprinkle the Parmesan over all.
  • 7. Top with more fresh basil.

Tips:

  • Prep Ahead: Marinate the shrimp in the lemon-herb mixture for at least 30 minutes or up to overnight to enhance the flavors.
  • Choose Quality Ingredients: Use large, fresh shrimp for the best texture and flavor.
  • Don't Overcook the Shrimp: Cook the shrimp until they are just opaque and pink, about 2-3 minutes per side. Overcooking will make them tough and rubbery.
  • Use a Large Pan: Make sure to use a large enough pan so that the shrimp can cook in a single layer without overcrowding.
  • Garnish Before Serving: Sprinkle with fresh basil and grated Parmesan cheese just before serving for an extra burst of flavor and color.
